Eggplant stuffed baked with cheese

Ingredients

eggplant 2 medium
sweet red pepper 1
a tomato 2 medium
bulb 1 medium
peeled sunflower seeds handful
garlic 4 cloves
dill, cilantro 1 bundle
cheese for sprinkling
mayonnaise grease on top
vegetable oil a little, for frying
salt, turmeric, spices taste

Cooking method

  • peel the eggplants from the stalks, cut in half lengthwise, cut out the pulp to make boats.
  • Heat a little vegetable oil, add spices there, fry them a little.
  • Add finely chopped onions, fry until golden. Add finely chopped eggplant pulp there until the juice evaporates.
  • Then add chopped sweet peppers and tomatoes. Evaporate a little and put all this mass in a bowl.
  • Add squeezed garlic, salt, seeds, finely chopped greens there.
  • Stuff the eggplant boats with the resulting mixture, sprinkle with cheese, grease with mayonnaise on top.
  • Bake in the oven at 180 degrees until tender. Serve with herbs.

Note

In Israel, eggplants do not taste bitter. If the eggplants are bitter, then salt them before processing, let them stand, then rinse and then follow the recipe.

Seeds are a "bonus" in this dish. You can also "play with" nuts
And eggplant in Israel does not taste bitter. Therefore, I do not soak them in salt water. Although, I heard that if you fry eggplants in oil (not in this recipe), then it is better to soak them in salted water first. It seems like they absorb less oils.
