Ingredients

Cooking method

  • First, we prepare the meat broth, with portioned pieces of meat, I use veal or beef, brisket.
  • Now we are preparing vegetable frying. We cut vegetables, onions, carrots, fresh tomatoes and 🔗 , crush the garlic, cut the sausages into pieces, fry in vegetable oil in a hot frying pan until the liquid boils out, so that the vegetables are a little fried.
  • Carrots, beets, onions, sweet peppers, parsley root, celery, tomatoes are best added to soups browned, so they are tastier. The coloring matter - carotene, which is converted into vitamin A in the human body, is poorly absorbed when raw carrots are consumed. When browning, the digestibility of carotene, which has passed into fat, increases significantly; in addition, the fat, turning orange, yellow or red, gives the soups a beautiful color.
  • Spices give soups a special taste, stimulate taste buds, promote the secretion of gastric juice and digestive enzymes.
  • Add the fried vegetables to a saucepan with broth, add potatoes (cut), mung bean (rinse), and bring the cereals to readiness.
  • At the end of cooking, add herbs to the soup, let it boil.
  • Pour the prepared soup into plates and serve, sprinkle with a green onion on top.

White and yellow mung bean cook longer than lentils and do not boil in mashed potatoes, retains their shape and color. Ready in about 20-30 minutes. I put it together with potatoes, nothing was boiled.

It is possible with a green wave, it's a matter of taste.
But green mung bean boils quickly and has a specific aftertaste, for which I do not like it. When boiled, it changes the color of the broth to dirty, I don't like that either
