Ingredients

pork 3kg
pita 3-4pcs
bulb onions 3-4pcs
lemon 2 pcs
ground black pepper
salt

Cooking method

  • Cut the meat into large pieces. It is very important!!! Marinate meat in lemon juice, onion (2 pcs), salt and pepper for at least two hours (but more is better). Then cook the barbecue in the traditional way over the fire. Cut the remaining onion (2 pcs) and put it on the pita bread, put the prepared meat here (on the onion), wrap it up and fasten it with toothpicks. Now you can serve it to the table !!! It turns out very juicy and tasty, by the way the lavash leaves faster than the kebab itself!

Well, about barbecue with raw onions - this is clearly not for everybody!
It would be nice to clarify why it is so important to marinate meat in large pieces. If it is cooked over a fire in the traditional way, then the large size of the pieces will make it difficult to roast the meat evenly and quickly enough. Moreover, in the above frame from the film, ordinary, small pieces are strung on the skewers. Neither there, nor in the photo you can see pita bread! In such cases Stanislavsky loudly declared "I do not believe!" Or from that kebab that the pita bread has already left in the photo?
It is also unclear why to complicate and delay eating a shish kebab just removed from the fire and cooling down rather quickly in the open air by wrapping it in pita bread (this is still all right) and stabbing it with toothpicks !? Then take a larger sheet of pita bread to swaddle it securely for one, two or three, and immediately into your mouth. And when there, among the birches and lovely ladies, to mess with toothpicks?

The best marinating of meat is in fresh onions, cut into rings or half rings. It seems to me that no other additives (kefir, vinegar, etc., etc.) are absolutely needed. Well, and of course, the skill of making a kebab, so that it is juicy and soft inside, depends on who prepares this kebab. The meat kebab should be accompanied by a salad of vegetables baked over the fire (well, I just highly recommend it).

No garlic needed. And cilantro too. This will change the taste of the vegetables.
