Custard cake in a multicooker or pressure cooker (kneading in a bread maker)

Ingredients

milk in a dough 120 ml.
wheat flour in dough 70 gr.
dry yeast (live) 3 tsp (30 gr.)
sugar 1 tbsp. l.

wheat flour 580 g
sugar 250 gr.
vanilla sugar 1 sachet
butter 180 g
eggs 2 pcs. (About 100 gr.)
salt 0.5 tsp
milk 130 ml.
vodka 2 tbsp. l.
cardamom 1/3 tsp
cinnamon 1/2 tsp
zest 1 lemon
raisins 100 g
nuts 100 g

Cooking method

  • Dough:
  • Pour flour with hot milk and stir until smooth. Cool to a warm state. Put the brewed flour in a bread maker, add yeast and sugar. Turn on the Pizza mode (we only need a batch, preferably heated). Turn off after mixing.
  • Add flour, sugar, vanilla sugar, salt, butter, eggs, milk, vodka (can be replaced with cognac, rum), seasonings to taste.
  • If the bread maker is Panasonic, then turn on the Dough mode (or Basic with raisins, then you will have to turn it off 1 hour before the end of the program, before baking).
  • If other bread makers, then wait 30-40 minutes. and turn on the appropriate mode for kneading and proving the dough.
  • Towards the end of the batch (after 25 minutes) add raisins and nuts (optional).
  • After proofing, transfer the dough to a multicooker or pressure cooker bowl.
  • Turn on the Dough mode in the Brand 37502 multicooker for 2 hours. Leave to come.
  • If there is no such mode, then turn on Heating (not to be confused with heating) for 10 minutes. and disable.
  • In pressure cooker Brand 6050 incl. Heating for 4 min. and disable. Leave covered for about 2 hours.
  • Baking in MV 1 hour.
  • Baking in a pressure cooker 45 min.
  • It may take more time, so be sure to try with a dry stick for readiness, if anything, add a little time.

Note

The dough is rich, heavy and takes a long time.
The cake is dense, with a moist consistency, rather muffin-like (not airy). Does not dry out, very aromatic.

I have a question: if MV Panasonic (large), then bake out of the entire volume of dough at once, or is it better to divide it into two, otherwise it won't bake?

It will be baked. In Panasonic 1 hour 20 oven (this is for a throw). You can check in an hour.
