Ingredients

corn starch 20 gr.

lemon syrup:
juice of half a lemon
water 50 ml
powdered sugar 50 gr.
vanilla panna cat:
cream 35% 240 ml.
sugar 55 gr.
gelatin 10 gr.
cream 12% 100 ml.
vanilla 1 gr.
lemon cream Kurd:
egg 3
zest of 1 lemon
sugar 100 g
lemon juice 140 ml.
gelatin 8 gr.
cut butter into small cubes 150 gr.
rectangular shape or frame 16x20

Cooking method

  • This cake is simply made for lemon baking lovers!
  • I adjusted the amount of sugar to my taste, who loves sweeter, you should add more sugar to the lemon curd and panna-kotu!
  • meringue:
  • Beat the egg whites until a light meringue, without ceasing to beat, gradually add sugar, beat until stable peaks, add the powdered sugar and stir gently with a spatula.
  • Place the meringue in a pastry bag (syringe) and place the tubes on a baking sheet with lined parchment paper.
  • Bake the meringues in the oven at 80 "for about an hour. Store them in an airtight container to keep them dry, cut into pieces for garnish.
  • biscuit:
  • Beat the butter and sugar in the cream until fluffy and gradually add the lightly beaten egg.
  • Sift dry ingredients together and combine with butter cream, stirring with a spatula.
  • Beat the remaining large egg lightly, then add to the dough and mix thoroughly, place in the mold and bake at 170 "20-25 minutes. Cool in the mold and soak in the syrup, release from the mold.
  • syrup:
  • Mix all ingredients and boil for 2-3 minutes. cool.
  • panna-kota:
  • cover the clean form in which the biscuit was baked with cling film (it is very convenient to do this when the form is wet, the film fits snugly and is easier to line!)
  • Heat the cream (240 ml) well in a saucepan and the sugar without boiling, soak the gelatin in cold water, when it swells, squeeze and add it to the hot cream, cool, then add the remaining cream (100 ml) and vanilla.
  • Place the mixture in a mold and refrigerate for 3-4 hours until it solidifies.
  • cream-Kurd:
  • Beat eggs, sugar and lemon juice together, place in a steam bath and stir constantly until thickened.
  • remove from heat and add soaked and squeezed gelatin, stir well, then add butter and beat, cool completely and refrigerate to thicken but not harden.
  • assembly:
  • On the soaked biscuit, put a frame from the mold, grease with a small amount of Kurd, put a panna-cat on top, which can be frozen before that, I did not freeze it, first I transferred it with cling film onto the biscuit, and only then I put a ring from the mold.
  • Spread the remaining Kurdish cream over the panna kota and smooth, place in the refrigerator overnight.
  • free the frozen cake from the mold by carefully cutting the sides and cut into portions, I got 12pcs.
  • Just before serving, garnish with meringues and grated and mixed with sah. powdered lemon zest.
