Ingredients

Sugar 175 g
Eggs 3 pcs.
Flour 225 gr.
Baking powder 1 tsp
Milk 2 tbsp. l.
Zest of 1 lemon
Lemon juice 40 ml
Powdered sugar for dusting

  • Why "Wind of change" you ask? Yes, because the long-awaited spring has come - the time of insights, pleasant discoveries, awakening of feelings! The spirit of change is in the air! And although everything is still gray and faded outside the window, but I already want to change myself and change everything around. I swapped my usual shower gel for a citrus scent! I bought myself a bright yellow blouse and now I delight my family with a sunny look! And in continuation of the lemon theme, I decided to change my favorite delicacy - chocolate! And bake a lemon muffin! But the recipe for a cupcake taken as a basis from the magazine Gourmet Pastry No. 2 "Cupcake with lemon icing", of course, has undergone some changes.
  • And so let's get started.
  • Remove the zest from one lemon using a fine grater or special. knife. Squeeze the juice from the lemon itself.
  • Grind butter and sugar into a fluffy mass. I did it with a mixer at min speed for 2-3 minutes.
  • Beat the eggs separately in a bowl.
  • Add eggs in small portions to the oil mixture.
  • Sift flour and baking powder and mix with butter and egg mixture.
  • Add milk, zest and lemon juice. Mix well.
  • Put the dough into a mold, flatten.
  • Bake at 180aboutFrom 1 hour - 1 hour 20 minutes (until a dry speck).

Up to this point, I have strictly followed the recipe. Next, it is recommended to prepare lemon syrup and pour over the finished hot cake. I decided to just sprinkle the cooled cake with powdered sugar and was right.
The cake came out with a crunchy crust and moist crumb, moderately sweet, with a fresh lemon note. Very tasty! For my taste, sweet and sour syrup would be superfluous. And it's a shame to admit, but half of the cake is gone.

Interestingly, I just made such a cake, but with different proportions of 250/250 butter / sugar, salt, 4 eggs, zest from two lemons, 250 g of flour and 1 tablespoon of baking powder. A syrup made from those two lemons (100ml) and 100g of sugar. Delicious.
But I wonder what the change in proportions will affect?

delgrande, you have significantly increased the proportion of liquid ingredients (sugar, butter, egg + ~ 200ml) and slightly dry (flour + 25g). This will affect the texture of the cake. In theory, it should turn out to be less dense, more airy. And how it really turned out, I can't judge, I baked only in the given proportions.
