Turkey cutlets with cottage cheese

Ingredients

turkey fillet 800-850 grams
soft cottage cheese 300 grams (homemade cottage cheese)
eggs 1-2 pcs.
small white roll 1 PC. or a couple of slices of white bread
bulb onions 1 PC.
cream 10-20% 50 ml. to the required minced meat density
fresh dill 1-2 tbsp. l. chopped
salt, spices taste
vegetable oil for frying.

Cooking method

  • Pass the turkey meat through a meat grinder along with the onions, or beat it to a fine consistency in a blender, which I did.
  • Break a loaf or pieces of bread with a blender, you get a small bread crumb.
  • Add all other ingredients to the minced meat, mix thoroughly until smooth.
  • Adjust the density of the mass with cream. The minced meat should be soft, but at the same time not tough. This is how I check the consistency of the minced meat: I put a lump of minced meat (a portion per cutlet about 100-120 grams in weight) on my palm, closer to my fingers, tilt my hand down, the lump of minced meat should want to fall into my hands (soft), but it holds and does not fall. So there is enough in the minced meat, you can bake cutlets.
  • I shape the cutlets, first roll the round balls in flour, then roll them in my palms, then make them oblong, shape them, and put them on a hot frying pan with butter, the heat is above average. Now you urgently need to fry the cutlets on both sides until a red, golden brown crust in order to fix the juice in the minced meat, then the cutlets will turn out juicy.
  • You can bring the cutlets to readiness under the lid (we reduce the fire lower), but you do not need to cover it tightly so that the cutlets are steamed, but at the same time, excess moisture does not settle on the cutlets, but comes out. When frying, the cutlets can and should be turned over a couple of times so that they do not burn and are fried evenly.
  • Put the finished cutlets on portioned plates and serve hot to the table.

Nadyusha, so you can steam it and make bread crumbs Bread crumbs are preferable for cutlets, the mass is softer than with dry semolina. I steam cutlets from ordinary minced meat, with bread crumbs.
But, if you wish, you can change it for crackers and semolina.

Brought a huge thank you for the cutlets. Well, very tasty and juicy. For me, turkey meat is rather dry and therefore is not included in my favorite menu. These cutlets are an exception. You really can't hear the curd. Full feeling that meat pork cutlets.
