butter 40gr
liqueur cointreau / rum / cognac 1 tbsp. l.

Cooking method

  • To be honest, I was very surprised that they are still not in our recipes. I know these pancakes as long as I can remember, and one of my friends taught me how to make them in the early married period. This is a very famous French dessert, which has undergone a number of minor changes in my hands from laziness and homemade performance. But no one bothers to make them in the classic version with exact adherence to the recipe (explanations on how they are supposed to be made are given along the way).
  • They are made quickly, but the dessert is wonderful. They are just dessert, that is, sweet, with tea, instead of candy.
  • First you need to bake thin pancakes. Any recipe you prefer. I always do according to my universal:
  • Pancakes "For all occasions":
  • 350g flour (2 cups with a small hill)
  • 3 cups liquid (2 cups milk + 1 cup cream or 3 cups milk)
  • 1 egg
  • a pinch of salt
  • 1 st. l. Sahara
  • vanilla sugar
  • 4 tbsp. l. ghee for elasticity and non-burning
  • Pancakes set aside, now we cook
  • Orange sauce:
  • 1. Take 2-3 tablespoons of sugar. The amount depends on the degree of your sweet tooth. 2 spoons - medium sweet, 3 spoons - sweet. Maybe someone will need more, but you can only understand this and adjust it to your own taste by trying it. According to the classic recipe for these dessert pancakes, sugar must be caramelized. That is, throw it into a frying pan and wait over medium heat until it begins to melt.

  • I almost never do that. I don't like fiddling with caramel, so you can just take brown sugar and not caramelize it. Go immediately to step 2 - put oil in it.
  • 2. Put a piece of butter in the caramel (or sugar, if you haven't melted it). Caution. The smallest fire, the caramel has a decent temperature, we don't need the butter to burn out and ruin the flavor.
  • 3. Put the zest of the orange, slightly warm it up with oil, pour in the juice of the same orange, let it boil for 5 minutes, pour in 1 tbsp. l. Cointreau or Roma:

  • if hard lumps have formed from the caramel, do not be discouraged, they will disperse in the juice, melt completely. The zest is actually removed for this dessert with a zest knife (such thin strips), but mine do not really like these "ropes", so I rub the zest. But keep in mind that grated zest can give a subtle bitterness. Choose from two options as you like best. Alcohol is added at will. They are supposed to be flamed, but I don't do this at home, so I just add it to the sauce for a rich taste.
  • 4. Put pancakes folded in four into a frying pan, hold for 3 minutes on each side over medium heat (until the sauce is almost completely absorbed).

I honestly thought that nothing in the taste of pancakes would change.but it must be tried to understand. really liked it. And I use it and add it. The zest gives some kind of strong citrus perfume (essential oils). The dessert is really very famous. That's why I was surprised that we didn't have it here yet.
