Made with dry yeast. The gingerbread man is well formed, elastic. During the rise, the dough came almost to the edge of the bucket, but after baking the finished bread turned out to be very small, I don't understand why this happened

There can be several reasons, including:
- a lot of liquid
- a lot of yeast
- the dough has stopped
As you describe, the dough has risen high to the edge of the bucket, it is quite possible that the dough has stopped. It is optimal for the dough to increase in volume two to two and a half times.
You need to understand the recipe, which could affect the rapid and large growth of the dough before baking Read the topic https://Mcooker-enn.tomathouse.com/index.php@option=com_smf&topic=7690.0

Made on the main mode, yeast - 1.5 tsp; liquid - homemade yogurt 300ml and 70 ml of water. But I think I understood what's the matter - instead of 1 tbsp. l sugar., I put 2. Maybe the reason is, because sugar enhances the effect of yeast?

And how much flour? Liquids 300 + 70 = 370 ml. Then you need about 550 grams of flour and wheat and corn.
Sugar is normal.

Now I looked carefully at the author's recipe, there are inconsistencies in the flour-liquid balance, there is a lot of liquid for such an amount of flour

It is advisable to see a photo of bread in a section, then it will be clearly visible.
In any case, try to monitor the quality of the dough, the flour-liquid balance

Hello, I have a Panasonic bread machine - 2501, I bought it a week ago, I'm mastering it and I'm wondering if it is possible to replace dry yeast with raw pressed in all recipes and how and in what sequence to add?

can dry yeast be replaced with raw pressed yeast in all recipes and how and in what order to add?
Nadyuska, can. Add in the same sequence as dry. I just finely chop them to the bottom of the bucket, then flour, salt, sugar, liquid. I use Lux extra yeast.

The recipe indicates, for example, 1 teaspoon of dry yeast, but how much will it be raw?

Per 100 grams wheat flour requires 2 grams of fresh, raw yeast.

This is my tanned bread. Reduced the amount of liquid, and the roof cracked a little. The bread has a crispy crust and a rather tender crumb.
