Buckwheat pancakes (with honey, without)

Ingredients

buckwheat flour (used "The Magician") 140 g (1 glass 200ml with a large slide),
milk 400 ml (2 glasses)
egg 4 things
butter 2 tbsp. l.
vegetable oil (refined) 4 tbsp. l.
granulated sugar (or better honey !!!) 4 tbsp. l.
salt 1/4 tsp
soda, vinegar like baking powder

Cooking method

  • Mix the egg, milk, granulated sugar, a pinch of salt, vegetable oil and melted butter in the quantities indicated in the recipe with a mixer at medium speed. Add soda, quenched with vinegar, mix again. Gradually adding buckwheat flour to the resulting mass, bring the thickness of the dough to the consistency of yogurt. Bake immediately !!! The dough can thicken a lot. Heat the pan, add vegetable oil to the pan and bake pancakes on both sides until golden brown. before each baking, stir the dough so that the flour does not settle to the bottom. Serve buckwheat pancakes hot, with sour cream.

My teacher (French, Breton) tells me that she doesn't make these pancakes here either, although my dad still makes it incredibly. She and I even had the assumption that they were made from green buckwheat flour, and not fried, like ours ...
