Ingredients

Dough:
wheat flour 300 g
milk 130 ml
fresh yeast 8 g
sugar 40 g
butter 30 g
eggs 1 PC
vanilla sugar 1 p
Filling:
walnuts 200 g
milk 50 ml
sugar 2 tbsp
cinnamon 1 tsp
protein from one egg

Cooking method

  • 1. Rub yeast into flour until fine crumbs are formed. Add milk, sugar and egg and knead the dough for five minutes. Add butter of a plastic consistency and knead for another 2-3 minutes at medium speed. Leave the dough to rise for an hour.
  • 2. Prepare the filling:
  • - Boil milk with sugar, pour into finely ground nuts and mix;
  • - add cinnamon, egg white and beat the mass with a blender (it is very convenient to beat it immersed).
  • 3. Roll out the matched dough into a square about 0.5 cm thick. Spread the filling evenly and roll into a roll. Cut an even number of pieces 2-2.5 cm wide. Fold one on top of the other and press in the middle almost to the base.

  • 4. Leave for proofing for 45-60 minutes, grease with yolk and milk. Bake at 180 degrees for about 15 minutes. Brush the buns with the remaining yolk again before baking.

Olga78, the filling is not dry and not "free-flowing". In fact, it is a nut butter that can be spread well with a knife. When baked, it does not flow and is evenly distributed over the dough. (Added another photo of the cut).

It is quite convenient to press with a thick wooden knitting needle, or something similar.
