Mint Orange Buns (Richard Bertinet)

Ingredients

flour 500 g
fresh yeast 15 g
milk 250 ml
sugar 80 g
butter 60 g
salt 10 g
eggs 2 pcs
fresh mint 0.5 bundle
zest with 2 oranges
orange liqueur 1 tbsp

Cooking method

  • 1. Coarsely chop the mint, boil for 2-3 minutes in milk. Remove milk from heat and let it brew for 30-40 minutes. Then strain and cool to room temperature.
  • 2. Grind yeast with 2 tsp of sugar (take from the total amount). Beat the eggs lightly with the remaining sugar and liqueur. Pour yeast, milk and eggs into the flour. Knead at low speed until smooth. Add salt, zest and soft butter (not melted). Knead for another 5-7 minutes. The dough turns out to be liquid and more like a thick dough.
  • Leave the finished dough to rise for an hour.
  • 3. Dust the cutting mat and hands with flour. Divide the dough into eight parts and shape into oblong buns. Place on a tray lined with baking paper. Spread at a considerable distance from each other, as the buns grow very strongly during proofing and in the oven. Grease the buns with yolk, slightly diluted milk and let them stand until doubled (45-60 min). Grease again with yolk and with scissors at an angle of 45 degrees, make cuts along the entire length.
  • 4. Bake at 220 degrees for the first five minutes, then lower the temperature to 180 and bring to readiness (another 10-15 minutes).

Note

The buns are very tender and seem completely weightless. Although after baking it turned out to be about 110 g. The taste and aroma are very refined and extraordinary. If someone doesn't like mint, I think you can make the buns just orange.
