Cooking method

  • 1. To prepare the cake, put dry yeast on the bottom of the mold. In this case, SAF-MOMENT yeast was used. One bag contains 11 grams of dry yeast and is designed for 1000 grams of flour for light doughs (cheesecakes, donuts, etc.) or 500 grams of flour for "heavy dough", for example, muffins. Since eggs, butter, juice, raisins are added to the flour and no water is used, the dough can be considered "heavy". Therefore, one bag of SAF-MOMENT is used completely.
  • 2. Wheat flour is poured on top.
  • 3. Then add salt, sugar, vanillin and butter.
  • 4. Add 4 eggs. Eggs of the C1 variety were used. The total weight of 4 whole eggs is 248 grams.
  • 5. Lemon juice gives the cake a beautiful golden crumb color and enriches the taste. To get 50 ml. it is enough to squeeze the juice from one standard lemon.
  • 6. The full dispenser is filled with raisins. The total weight of raisins is 150-160 grams. You can also use candied fruits and nuts.
  • 7. Set the size "L" on the bread maker.
  • 8. Next, you need to run the 6th program, which is called "Diet raisin bread".

I baked it a couple of days ago, it turned out the same as in the photos above. Lush, tall, porous inside and sweet, only the side crust came out dark burnt. At the beginning of the kneading, the dough seemed too liquid and I added 2-3 tablespoons of flour, it turned out that in vain - the top crust cracked around the bucket perimeter. The recipe was slightly changed: 1) instead of 100 g of butter, I put as much as was found (about 50 g) and added 45 g of water, 2) the juice was from a 3-liter bottle "apple-cherry reconstituted, with sugar" (sour cherry to taste). The content of 4 eggs stretched for 220g.
Until I figured out why the HP on the 5-hour program "Diet raisin bread" just costs 2 hours without stirring anything? Why such a long standing? It seemed inconvenient to me, because according to the instructions for model No. 2500, raisins should be poured after "pi-pi-pi" and then press Start to continue the program.

In my opinion, there is too much yeast in the recipe. In reality, 1.5 ... 1.75 teaspoons of SAF-Moment are enough. With such a dosage, at least it turns out not so loose and does not smell like yeast. In a simple dough I put 1% yeast by weight of flour, in a dough with a large amount of fat 1.5-2% - this is enough to get delicious fluffy buns. Good luck!

one.The resulting bread is not very similar to a cake, the pulp is more like a crust;
2. Despite the extra spoonful of sugar, the sweetness seemed not enough (perhaps the reason is that the raisins were not very sweet and sour);
3. Bread has, though not a strong, but noticeable smell of yeast, apparently, 11 grams is still a bit too much.

We loaded the second one with amendments, in the morning we'll see what happens.
