Cottage cheese pudding with steamed apricots (Cuckoo 1054)

Ingredients

cottage cheese 600 gram
sugar 4-5 st. l.
butter 3 tbsp. l.
eggs 2 pcs.
bread crumbs 1/3 cup
thick cream 1/3 cup
dried apricots 8-10 pcs.
vanilla sugar pinch
salt 1-2 pinches
Salsa:
Pears 2 pcs.
butter + vegetable oil 1.5 tbsp. l.
sugar 2-3 st. l.
lemon zest 1 tsp
lemon juice 1-2 tsp
cognac 1-2 tbsp. l.

Cooking method

  • A mold with a diameter of 16 cm is required.
  • Cooking in the Multicooker CUCKOO 1054
  • Rinse dried apricots with hot water, cut into small pieces or strips.
  • Combine cottage cheese, cream, butter (melt, cool), sugar, salt, yolks, vanilla sugar, beat with a blender.
  • Add bread crumbs, which can be obtained from several slices of white bread, broken into crumbs with a blender.
  • Beat the whites in a thick foam, add to the curd mass, carefully combine with a spatula, stirring in from the bottom up.
  • Add dried apricots along with proteins, stirring gently.
  • The curd mass will turn out to be liquid, put it in a mold (grease the bottom and sides with butter), smooth the surface, but do not press down the mass.
  • Pour 500-600 ml of water into a multicooker pan, put a steamer grate, put a mold with curd mass on top.
  • Enable Steamer mode, level 2, 15 minutes and bring to readiness. After the signal, turn off the Heating mode and leave the mold with the finished pudding for 30-40 minutes under the closed lid.
  • Open the lid, remove the pudding dish, place on the table, cover with a towel and let cool completely. Hot (immediately after steaming) the pudding is very liquid, even with a spoon!

  • Cooking pear salsa.
  • Peel the pears, cut into small cubes. Dissolve the butter in a saucepan, add sugar, lemon juice, zest and bring until sugar dissolves. Add pears in cubes, fry for 2-4 minutes until the fruit is transparent, then add cognac and evaporate the liquid a little, but so that the liquid-syrup from the caramelization of the fruit remains.
  • Remove the cooled pudding from the mold (turn it over) onto a plate, pour the pear salsa on top. Cut into portions and serve.

Note

I have done this pudding several times already, and I liked it more than the curd casserole baked in a slow cooker.

The pudding is very delicate in consistency, soft, airy - delicious! And it should be noted that steamed pudding has never been a donkey to me! It always retains its shape, despite the fact that it is very liquid when hot!
Instead of semolina and crackers, I add ground bread crumbs, it is wet and does not take a lot of liquid from the curd, but it gives the curd shape!

The pudding has never settled down after cooking, retained its shape when it cooled.

Instead of dried apricots, you can add dried apricot puree in pieces, for which dried apricots pour a little water and boil until soft and then beat with a blender until puree. And you get a yellowish color of the pudding!

It is scary to look at it when hot, very soft, you can scoop it with a spoon - when it cools completely, it retains its high shape, soft inside.

And the children and grandchildren simply praised me, it turned out to be a delicate yummy and I, now, I think, why didn’t I get the idea to make a cottage cheese grandmother for a couple like cottage cheese pudding? I didn't have time to take a picture because I had only 500g of curd, I did it and ran away, and my family, knowing that I was fasting, ate it, and when I came there was nothing to shoot, but naturally, I will still do and report as expected ... Yes, this pudding is different from baking in the oven. The roof for a couple will always be flat, and does not sit down, which is what I like.
I keep the finished pudding under the lid until it cools down, then it slowly comes up. And try to cover the mold with foil, make a small dome over the mold, so moisture does not get on the pudding, and the roof will be better, smoother.
