Personally, I prepare the fish as follows: first, I cut off the head (of course, after the fish has already been gutted and cleaned of scales), then I put the fish on the board with my back to me. Slightly lower (3-4 cm) from the top, I make an incision along the ridge to insert a knife there.
The knife needs a long, sharp and flexible, so-called - sirloin.
I insert the knife, feeling with it that it lies exactly on the spinal bone, then, pressing the knife to the bone, I cut first in the long side (to the tail), feeling how small bones are cut, then finishing the uncut section from the side of the head. One filet is separated, the second filet with a backbone remains on the table. I bring the knife approximately in the middle under the ridge and make an incision, also leading along the bone, trying to press the knife as tightly as possible to it. Thus, the spinal bone is cut out. Then I take the tweezers to remove the fish bones and remove the small bones from both fillets.
If you also need to remove the skin, then I put the prepared fillet on the table (my tail is on the left), with my left hand with a paper napkin I hold it at the tail, I bring the knife as close to the skin as possible, do not cut the old knife and lead the knife to the right parallel to the table surface.

If you took frozen pollock henceforth, then the porridge will work out.

Thanks for the help. I tried to peel the pink salmon from the bones, in total, 2 fillets turned out + a bunch of small pieces that I scraped off the skin. Pink salmon peeled easier than pollock. Now I want to make a fillet of flounder, can someone have a video of how to remove the bones from it?

And along the ridge, starting from the upper part of the back, separating the fillet first on the left along the ribs and up to the tail, then also on the right along the ribs and up to the tail.
