Ingredients

flour 210 g
baking soda 1 tsp
salt 1/4 tsp
cocoa (preferably alkalized) 1/2 stack. (45g)
butter 82% 150 g
vanillin
sugar 250 g
eggs 4 things. (220 g)
milk 1 stack. (240ml)

Cooking method

  • set two shelves - 1/3 and 2/3 the height of the oven. heat the oven to 180C. oil and dust with flour, or line 2 cupcake tins with paper tins, mesh diameter approx. 7cm.
  • sift flour, baking soda, salt and cocoa together.
  • beat butter, add vanillin and sugar, beat. add eggs one at a time, whisking thoroughly after each until smooth. if necessary, remove from the sides of the bowl with a silicone spatula.
  • at the lowest speed, knead in turn - 1/3 flour mixture, 1/2 milk, 1/3 flour mixture, 1/2 milk, 1/3 flour mixture. remove the dough from the walls with a spatula, mix only until smooth, do not beat.
  • Put the dough into molds 2/3 or 3/4 of the height of the molds. I added a five-minute cherry to some, 3 pcs. into each one. do not smooth the top - it will even out itself during baking.
  • oven 25 min or until the top bounces if pressed lightly.
  • cover by glaze:
  • 170g dark semi-sweet chocolate
  • 80g cream 33%
  • 1 tbsp. l. Sahara
  • 22g butter (if cream is 20%, more butter, 30 grams)
  • put everything in a bowl, over low heat, stirring constantly, heat until the chocolate melts. remove from heat, cool to room temperature. Dip the tops of the cupcakes in the glaze, place on the wire rack. if after everyone has been dipped, there is glaze left, you can dip it again in a circle.
