Milk bread La corteza de leche (oven)

Ingredients

dry yeast 1.5 tsp
wheat flour 550 g
powdered milk 30 g
whole milk 270 ml
sugar 2 tbsp. l
salt 1.5 tsp
egg (large) 1 PC
butter 30 g
sesame seeds for sprinkling (optional)
1 yolk + 1 tbsp. l milk (for the top)

Cooking method

  • Cooking dough:
  • we send yeast, sugar, 150 g of flour (from the total volume) and 130 ml of milk (from the total volume) to the bucket of the bread machine. We turn on the "Pelmeni" mode or any other mode, the main thing is that the kneading starts immediately. The batch can be stopped after 10 minutes. We leave the dough to ferment for an hour.
  • Add the rest of the ingredients and turn on the kneading dough again, add the butter last. We leave the dough for proofing in a bread maker or put it in the oven with the light on for 2 hours, during which time we knead it a couple of times.
  • We spread the dough on a table lightly sprinkled with flour, roll it into a layer, roll it into a roll and put it in a mold in which we will bake. Cover with foil and leave for another 40 minutes. During this time, the dough should double in size.
  • Mix the yolk with a spoonful of milk, gently grease the top and leave for another 10 minutes. Grease again, sprinkle with sesame seeds and send to the oven preheated to 250 degrees. Immediately lower the temperature to 220 degrees and bake for 10 minutes, then lower the temperature to 200 degrees and bake until tender for about 30-35 minutes (be guided by your oven).

Note

The recipe from the Internet, I can't remember the site address, for so long it lay in my bins and finally waited in the wings.
The bread turned out to be soft, with a milky taste and a thin crust. Recommend.

Sonadora tell me, is dry milk important or can you replace whole milk?

Sonadora
mamontenok, with milk powder the taste is even milder. If without it, then the amount of milk (liquid) does not need to be increased.

Manyun, what a beauty! I will definitely try to bake it, it’s hooked!
Manyun, and the name of bread in translation sounds like "Milk crust"?
Sonadora
Little one, yeah, milk crust.

I will definitely try to bake

I hope you enjoy it.

I have another version of this bread in the bins, only there instead of milk - 300-310 ml of cream of 20% fat. I will bake - I will report.

Manyun, and the rest of the prescription?
Sonadora
Innochka, on prescription.

Today I baked bread with 20% cream. 150 ml of cream went into the dough, then 1 protein (45 ml) + cream = 220 ml, and the yolk remained to grease the top. Saved.

The cream bread version is different from its dairy sibling. It turned out not so fluffy and light. The dough was also different, more oily, plastic. My consumers voted unanimously 1 option.

I have never baked bread in the oven, but I really want to try it.

Tell me, in the oven in what mode is bread usually baked? Convection or just top + bottom?
Do I need to lubricate the form with something? Or sprinkle with flour?
Sonadora
Mandarinka, I have a gas oven + grill, without convection.I grease a baking dish, even with a non-stick coating, with a little vegetable oil. I bake buns at the very top, bread - on the second level from the top, I do not use the grill.
Here HERE we have a little topic on how to bake bread in the oven.
