Carrot cake (Liberton LMC 03-01)

Ingredients

fresh carrots 150 g
eggs 3 pcs.
sugar 2 / 3-1 / 2 tbsp.
flour 1 tbsp. with a slide
vanilla sugar 1/2 pack.
baking powder 1.5 tsp.
FOR SYRUP
water 150 ml
sugar 2 tbsp. l.
lemon 1 slice
FOR CREAM
sour cream 200 g
powdered sugar 100g
vanilla sugar 1/2 pack.

Cooking method

  • Grate the carrots on a fine grater or chop with a blender. The juice can be squeezed out (I did not squeeze). Beat eggs with sugar, add vanilla sugar, chopped carrots, flour mixed with baking powder, mix. Grease a bowl of MB with oil and pour out the dough.
  • I baked in a small MV for 45 minutes.
  • Boil the syrup, soak the cut biscuit.
  • Beat sour cream with icing sugar and vanilla sugar. You can add thickener "Smeta" to the cream.
  • Smear the cake soaked in syrup, fold the cake and decorate as you wish.
  • P.S. You can make a creamy lemon cream by adding 1/2 lemon, chopped in a blender, to the cream.

Yukasas77, everything is simple. Boil water in a small saucepan (or ladle), add sugar, cook several. minutes before dissolving, turn off the stove. Add a slice of lemon or vanilla sugar to the syrup. You can soak in hot syrup if in a hurry, or cold syrup.
Soak, pouring with a spoon, evenly on the two inner sides of the cut biscuit. While cooling, prepare the cream.

Natusya, I would also cut it into 3-4 layers, but at home there was only 1 tbsp. sour cream, other cream to make time was not. Yes, and I love this cream - light and tasty.
I baked in a small MV (Panasonic was busy with another business) So in a large MV the biscuit will be lower, maybe only 2 times will have to be cut. Spices for 5 eggs will be just right!
