Diet eggplant caviar in a Panasonic multicooker

Ingredients

Small ripe eggplants 6 pcs.
Bulbs 2 large
Garlic 4-6 teeth
Bell pepper 3-4 large
Canned Tomatoes
in its own juice
(or 6-8 fresh tomatoes)
1 can

Greens (dill, cilantro, parsley ...) bundle
Dry spices taste
Salt
Olive oil 1 tbsp. l.

Cooking method

  • Put the eggplants in one layer in a slow cooker and cook in baking mode for about 90 minutes, turning over several times. I line the bottom with foil to keep the multicooker pan clean.
  • Remove, peel and mash with a blender.
  • Grind greens, as well as peeled tomatoes with a blender and mix with eggplants with juice. Season with tapering spices and a little salt (canned tomatoes already contain salt).
  • In a slow cooker in a small amount of olive oil, lightly fry the finely chopped onion and garlic (in the baking mode for 10-15 minutes), add the chopped peppers and fry for about 5-10 minutes, add the cooked puree and bring everything to a boil (5 minutes in the baking mode) ... You can then leave it in heating mode for a while. If the taste seems bland, you can acidify it with lemon juice or balsamic vinegar.
  • If you immediately spread the hot caviar in clean, dry jars with screw lids, it will take a long time in the refrigerator.
  • You can take fresh tomatoes. BUT! when using canned tomatoes in your own juice, CAVIAR COLOR WILL PLEASANT YOU, but with fresh tomatoes you won't get a beautiful tomato color ...

You may not need to line it - but the saucepan will continue to be needed for the next stage, and the eggplants must be baked whole and even with tails, without oil, so they can weld without foil, but not through the foil

The second question is what is the consistency of caviar? As usual I cook - it is quite dense and does not spread over the plate, but retains its shape. How long does it take to cook?

The fact is that I don't roll anything up for the winter, I do it as needed, it costs a maximum of a week - a couple of weeks in the refrigerator.

This recipe provides as many products as needed for the number of eggplants that can be baked in a slow cooker at a time.
And if x is baked in several stages, then, of course, several times more food will go into the 4.5 l multicooker. I think 2-3 times more, but I never did that.
Try starting with 2 servings.
Or you can cook without first baking, but this will be a different recipe.And in this recipe, due to baking the eggplant, there is less liquid

Yes, caviar should not spread on the plate, especially since some of the products are not pureed, but finely chopped (onion and pepper)
