I took the idea of ​​the recipe from the book of my favorite Greek pastry chef Stelios Parlyaros, but I fundamentally changed the recipe itself, I like the chocolate bisweet presented in my recipe more and I added cherries, which so brightly and juicy ennobled the taste of the cake that I can’t even think of cooking it otherwise! Highly recommend, try it!
  • biscuit (cook the day before):
  • sift cocoa, flour and salt together.
  • Beat eggs at high speed until the volume doubles and without ceasing beating add sugar, beat for at least 7 minutes.
  • in two steps introduce the flour mixture and mix with a spatula by folding from bottom to top and in a circle.
  • Pour the dough into a mold, twist clockwise a couple of times so that a dome does not form and bake in a preheated oven at 180 "40-45 minutes. Do not overdry! Focus on your oven!
  • Free the cooled biscuit from the mold and wrap in plastic wrap, stand for 24 hours.
  • grate the biscuit on a coarse grater (this is done quickly and easily), add the cherries, well strained from the juice and mix.
  • prepare ganage:
  • Heat the cream to 90 ", but do not let it boil, pour chocolate into the hot cream and after 1-2 minutes stir until smooth and homogeneous.
  • add the still warm ganache to the biscuit crumbs and mix well.
  • put on thin gloves and roll 12 dense balls from the biscuit-cherry mass.
  • roll each ball in chocolate chips.
