Ingredients

Dough number 1
Whole grain wheat sourdough 100% moisture 150g.
Carbonated mineral water 65g.
Whole grain wheat flour 150g.
Maltose syrup 15g.
Vegetable oil 10g.
Salt 5d.
Dough number 2
Whole grain wheat sourdough 100% moisture 150g.
Carbonated mineral water 50g.
Wheat flour 150g.
Sugar 10g.
Vegetable oil 10g.
Salt 5d.
For lubrication:
Milk
For sprinkling:
Sesame

Cooking method

  • Refresh the sourdough first. I have French liquid.
  • Cooking dough number 1. Using a fork, mix the starter culture in a jar with molasses, water, oil. Pour HP into the bucket. Top with flour, salt. Mix within 20 minutes with heating on any program. Next, form a ball from the dough, put it in a container slightly greased with vegetable oil and leave until it doubles.
  • Cooking dough number 2. Mix the starter culture in a jar with a fork with water, vegetable oil. Pour HP into the bucket. Top with flour, salt, sugar. Dough mode. After kneading the HP, turn off and leave the dough to increase by 2 times.
  • The exact rise time of the dough depends on the strength of the leaven, flour, room temperature and humidity and can be from 3 to 5 hours.
  • Then, separately, knead each dough, roll it into a rectangle, grease it a little with vegetable oil, lay one on top of the other and roll along the long side.
  • Cut with a sharp knife into 2cm thick pieces. I got 12 pieces. I want to clarify that it is better not to cut with a knife, but rather to saw. Then the pieces are not sticky.
  • Dip each piece in sesame seeds and place on a baking sheet lined with paper. Cover with a towel and leave until doubled (2-3 hours).
  • Sprinkle with milk before baking.
  • Bake in an oven preheated to 200C for 15 minutes, then lower the temperature to 180C and bake for another 15 minutes. Cool on a wire rack.

  • The aroma was incredibly bready when baking !!!!! And I also liked the taste, despite the ZZ flour.

Mistletoe, well, what a miracle buns! And the flour I have is exactly the same CZ, took everything to the bookmarks. I don't have time to repeat your recipes, you issue them much faster than it is possible to implement them in my kitchen. Probably I don't have so many eaters, I just finished the sour cream pie, and next in line are two more recipes and here these Curls are wonderful ... I love baked goods with central wheat flour, I will definitely try it, and experiment with sourdough.
