Chocolate-almond cupcakes (no flour)

Ingredients

eggs 4 things
sugar 105 g
chocolate (57% cocoa) 60 g
ground almonds 105 g
dark rum 1 tbsp
powdered sugar 1 tbsp
cream (fat content 35%) 200 ml
chocolate cream 200 g
vanilla 1 sachet

Cooking method

  • 1. Separate the whites from the yolks. Beat the egg yolks with vanilla and a tablespoon of rum until frothy.
  • 2. Beat whites with sugar (add sugar in 3-4 doses).
  • 3. Pour melted chocolate into the yolks and beat well. Combine with proteins, add finely ground almonds. Distribute on tins and bake at 200 degrees for 10 minutes (until a dry skewer). Remove from the oven and let cool.
  • 4. Beat the cream with the icing sugar until it is stable and creamy. Add the chocolate cream and beat again. Cover the finished cupcakes with cream, decorate as desired.

Note

The dough will settle slightly after baking, so it is better to fill the molds almost to the top. In my family, they are quite calm about chocolate baked goods, but they ate it with incredible speed and immediately demanded that the banquet be continued. We loved these cute little things.
