Ingredients

Dough number 1 (light):
Rye flour 85g.
Wheat flour 160g.
Water 140g.
Fresh yeast 6d.
Salt 5d.
Caraway 2d.
Maltose syrup 10g.
Vegetable oil 15g.
Dough number 2 (dark):
Dough number 1
Cocoa 12g.
For lubrication:
Egg (not used) 1 PC.

Cooking method

  • Prepare the light and dark parts of the dough separately. I kneaded simultaneously in the HP mode "Dough" and in the combine with knives for 7 minutes at high speed.
  • Dissolve the yeast in water, add molasses, mix, pour into a bucket of HP. Add vegetable oil. Top with flour, salt, cumin. For dark dough plus cocoa.
  • Leave the dough to rise for 1.5-2 hours.
  • After a lapse of time, knead the dough separately. Since the dough is slightly sticky, you can grease your hands and table with vegetable oil.
  • Divide each dough into 2 equal parts and roll out into rectangles along the length of your shape. It is not necessary to roll out thinly, otherwise the dough may break during baking.
  • Fold the rolled rectangles in layers one on top of the other: light-dark-light-dark. Roll on the long side. Bend the edges.
  • Place the roll in a greased mold. I have a form of 1.7 liters. Leave for another 1.0-1.5 hours.
  • Brush with egg before baking. I forgot.
  • Bake in an oven preheated to 200C for 30-40 minutes. After 30 minutes my bread turned brown, I reduced the temperature to 180C and sang for another 10 minutes.
  • Grease the finished bread if desired. Cool on a wire rack (1-2 hours).
