Pumpkin dough Nikumans

Ingredients

For the test:
Flour 330-400 g
Pumpkin puree 300 g
Salt 0.5 tsp
For filling:
Chicken fillet 600 g
Bulb onions 3 medium heads
Green onion 6 stems
Soy sauce 50 ml
Fresh ginger 3-5 cm
Canned bamboo shoots 175 g (did not put)
Salt 0.5 tsp
Freshly ground black pepper

Cooking method

  • Nikuman - steamed bun (pie), a dish of Japanese cuisine.
  • The name Nikuman is also known in the Kansai region as Butaman. The Nikumans originally come from China. However, over time, the dish spread and became popular throughout Japan. In winter, hot, smoking nikumans are sold from stalls on the streets and in stores.
  • Any orange-fleshed pumpkin can be used for this recipe.
  • Bright sunny dough, in which the taste of pumpkin is absolutely not felt. Spicy, very juicy and tasty filling.
  • Preparation:
  • Peel the pumpkin from seeds and skin. Cut into pieces, place in a suitable dish with a lid and place in the microwave.
  • Bake at 600 W for 7-9 minutes.
  • Purée the hot pumpkin pulp with a mixer or rub through a sieve for a more homogenized consistency.

  • Let the puree cool, add salt to it and knead the dough. I kneaded in HP on the Pelmeni program. I had to add a decent amount of flour, since I originally added 330 g, as in the original recipe. In total, it turned out about 400 gr.

  • For the filling, pass vegetables and meat through a large meat grinder or finely chop. Mix and season with soy sauce, salt and pepper. Grate the ginger on the finest grater, add to the filling.

  • Dip each piece in flour and roll it into a circle 10-12 cm in size. The consistency of pumpkin dough is very elastic.

Soak the Shiitaki overnight, squeeze out the water (save the water), cut.

Soak the shrimps for 1 hour in warm water, squeeze out (save water), cut.

Drain water from shiitaki and shrimp through a strainer, add hot water to 130 ml

For the test - flour, instant yeast, baking powder, sugar, salt - stir slightly, add sesame oil, stir. Gradually stir in the water from the shiitaki and shrimp, when the dough gathers into a lump - dust the cutting board with a little flour and knead with your hands for 10 minutes. Kneaded dough - smooth, elastic - place in a bowl, tighten with plastic wrap, put the bowl in a container with water 40 degrees C, for 30 minutes. Cover the container with a lid.

Boil a cabbage leaf for 1 min, cool on a sieve, chop finely, squeeze excess water through a paper towel.

Chop the leek stalk finely.

Finely chop the ginger root.

Chop the pork finely, add salt, pepper, sugar, soy sauce, oyster sauce, 5 Spice powder, sesame oil, stir gently. Add potato starch and stir until smooth. Add cabbage, leek, ginger, shiitaki and shrimp, mix thoroughly. Divide the minced meat into 4 parts. Lightly grease hands with rast. butter and form 8 balls.

After 30 minutes, the dough will double in volume, knead, divide into 8 pieces, roll into balls, leave for 10 minutes. Roll out into circles with a diameter of approx. 10cm, place the filling, pinch, place the Nikumans on squares of baking paper.

When the water in the steamer heats up, turn off the gas, put the Nikumans on the grid and leave for 10-20 minutes. When the Nikumans have doubled in size, turn on the burner over a high fire. When the water boils, reduce heat and steam for another 15 minutes.
