Ingredients

Wheat flour 400 BC
fresh yeast 15 g
salt 1/4 tsp
vegetable oil 2 tbsp. l.
water 250 ml.
Filling:
tomato 0.5 kg.
tomato paste 2 tbsp. l.
water (juice from chopped tomatoes) 4 tbsp. l.
hard cheese 0.3 kg.
baselik sush. 1 tbsp. l.
oregano sushi. 1 tbsp. l.

Cooking method

  • This summer I faced the problem of making pizza. Summer. Heat. Dacha in the village. Children ask for pizza - it is impossible to buy it in the store - it is not there. Stoking the stove is almost suicide. So I had to look for a way out and found it. The result exceeded all expectations. Try it. Not worse than cooked in the oven.

  • Knead the dough. While it rises thin chop the tomatoes, grate the cheese (Parmesan is better, but I have the usual Tilsiter available). Or something else that you love. Dilute the tomato paste 2 to 1 with the juice left over from cutting the tomatoes.
  • The dough has already doubled. Divide into 6-7 parts. Roll each on a floured table into a thin pancake about the size of your skillet.

  • We will fry our pizza in olive oil, on small fire. But before lowering the heat, heat up the entire pan well.
  • Turn over after 1-2 minutes.

Note

I want to make a few explanations. The dough should be dense enough, not like dumplings, but a little drier than ordinary yeast, look at the kneading process and add water or flour.

Fry pizza over low heat, this is important !!! The bottom should not be rosy, otherwise it will be the wrong pancake and the wrong consistency. The base should not be crispy. It bakes very quickly. While you are placing the filling on the next pizza, the first is already ready, etc.

Thanks for the question. After 1-2 minutes, turn over (see text and photo), and then the filling, etc. Please note that the turned side is white, not fried, this is important.

I am very glad that the recipe was useful to you. But why crispy ?? Maybe the frying pan is thin and quickly fried ..... I make it on cast iron and the dough I get is viscous, or something, in general, like in real pizza. But if you like crunchy, why not. Thank you for your feedback !!!!!

You know we have a favorite pizzeria. So this pizza turns out to be very similar. The dough is obtained with a crispy bottom. Probably all the same because of the frying pan.
