  • Most ordinary pears (or apples; the main thing is that the fruits are tough), before pouring with a little red wine, it would be desirable to peel them. So the fruit will more fully absorb the wine and the taste of spices, which are added to the wine a little later. But a peeled fruit is a peeled fruit. And in solving this problem - to give the dessert an appropriate taste, while preserving the natural appearance of pears - not everything that is needed will work out. Therefore, I still put the pears mentioned in the saucepan in their original form. And I pour red dry wine just enough to cover the pears by only a quarter.
  • Next, rub half a nutmeg directly into the wine and add two or three cloves.
  • I let the wine boil and, with a very moderate boil and a covered lid, I boil the pears for about 15 minutes, without turning. Then, turning them over, cook them for another 10 minutes. It is important for me that they soften, but continue to retain their shape, which is already problematic to achieve with longer heat treatment.
  • I transfer semi-cooked pears to a separate one. plate, remove the clove seeds from the remnants of the wine and cook the syrup in the same wine. To do this, it is enough to mix 4-5 tablespoons of granulated sugar into it, bring to a boil and, stirring constantly, wait until the syrup begins to thicken. A good harbinger of thickening is a bubbling foam on the surface of the syrup.
  • Now semi-cooked pears can be returned to the syrup, let them boil for another 7-10 minutes ...
  • ... take out, put on a portioned dish and spill well with the prepared syrup. Chill so that the pears remain slightly warm, and the syrup turns into actually a toffee caramel. Try it.

Thanks for the recipe, I tried something like this in one restaurant, there were different fruits (pears, apples, pineapple and banana), everything was cut into large pieces. I wanted to find a recipe and make it at home. I will try it in the coming days.
