Ingredients

White onion 50 g
Jerusalem artichoke 100 g
Rye wallpaper flour 6 tbsp. l.
Infusion of kombucha 100 ml

Cooking method

  • Three onions and Jerusalem artichoke on a coarse grater. It is better to take sweet onions - white (not so perfumed).

  • Add six tablespoons of rye flour and 100 ml of kombucha infusion (at least 3 days).
  • We put in a warm place - T from 22 degrees, optimally 25.

  • On the first day, the smell of onion from the leaven was strong, by the third day it almost disappeared.
  • The baked rye bread had a good taste with sourness and a pleasant smell, a beautiful structure.
