Ingredients

premium wheat flour 100 g
whole wheat flour 350 g
peeled rye flour 50 g
water 220 ml
fresh yeast 10 g
salt 12 g

Cooking method

  • 1. Dough: 100 g of flour, 100 ml of water and 2 g of yeast, put the dough. Fermentation time - 2 hours at T 28-30 degrees.
  • 2. Add the remaining ingredients to the finished dough and knead the dough (I mix with a mixer for 10 minutes at medium speed). Leave to rise for 1.5 hours in a dish oiled with vegetable oil.
  • 3. Form two loaves and proof for an hour.
  • 4. Bake for the first 5 minutes with steam (T 230), then lower the temperature and bring until tender.
