Ingredients

Cooking method

  • I deliberately did not write the ingredients by quantity, because both quantity and composition may vary. You can take any vegetables in any proportions.
  • You can use ready-made commercial Teriyaki sauce, or you can prepare an analogue yourself.
  • I found a lot of recipes on the internet. I took the simplest recipe.
  • We take 1/2 cup of soy sauce, 1/2 cup can be replaced with any white wine, except dessert), 1 tbsp. l. sugar and 1 tbsp. l. 3% vinegar (in the original rice, but can be replaced with apple cider), 1 tablespoon of ginger, finely chopped.

  • First cut two chicken breasts in half in thickness,

  • then cut across the fibers into strips 1.5 - 2 cm wide.

  • Preheat a large teflon-coated pan, pour 4-5 tbsp. l. vegetable oil, wait a few minutes and spread the chicken piece by piece (not all at once), shaking off the excess sauce. Fry on fire for more than medium for several minutes on one side and the other. Fry until the skin turns dark golden.
  • At this point, you can easily dry out the teriyaki chicken in less than five minutes, so keep an eye out. The pan should be heavy and very hot so that the frying process goes as quickly as possible and the chicken remains juicy.

  • Put the chicken in a bowl and cover with a lid to keep it warm.
  • In the same skillet, heat the vegetable oil with the addition of soy sauce. Fry vegetables in the following order:
  • 1) cabbage + carrots - fry over high heat in tech. 5 minutes, stirring continuously
  • 2) pepper + beans - fry for 3 minutes
  • 3) zucchini - fry in tech. 2 minutes
  • 4) onions - fry in tech. 2-3 minutes
  • In another pan, fry the mushrooms in the remaining marinade. Simmer for 5-8 minutes. Then mix vegetables with chicken and mushrooms. And while stirring, hold on the fire for another two minutes so that the chicken warms up.
  • You could also boil rice noodles for 5-10 minutes in salted water, drain the water and add oil, but I got by with vegetables.
  • Arrange the ingredients in a dish in the following sequence: noodles, a mixture of vegetables and mushrooms on it, chicken pieces on top. And serve!
  • The noodles ... are usually quite long and that's why they eat it like this: once you pick it up with chopsticks, suck the noodles into your mouth .... chewed? Repeat the process, do not be shy about the squelching sound you get. The Japanese consider him decent and quite worthy.
  • The basis of teriyaki is the sweet rice wine mirin, it is it that "varnishes" the dishes and gives them a special aroma. Moreover, it is quite strong, which makes Mirin an ideal flavor for fish dishes. Four centuries ago, this drink was still considered alcoholic, but then they began to make it thicker, sweeter and used only for culinary purposes. Mirin is made from the fermentation of parboiled rice, rice yeast and Japanese gin. Moreover, the exotic mirin in our area can be replaced with the now not so rare rice vodka sake and sugar in a ratio of 3: 1 or, in extreme cases, with dry vermouth or dessert wine.The very name "teriyaki" comes from two Japanese words "teri" (to shine) and "yaki" (to fry). This is not just a sauce, but rather a special way of cooking, when meat, fish or vegetables are pre-marinated and then fried over coals or in a pan. The dish turns out to be delicious and literally shiny, as if varnished. Just like Indian curry, Japanese teriyaki has now entered the international culinary vocabulary, and whatever is prepared with this seasoning is now called "teriyaki" whether it is Japanese or not. which is a mixture of fried beef and vegetables.
  • Here are some more options for making the sauce:
  • Teriyaki sauce
  • INGREDIENTS:
  • 2 tablespoons cornstarch
  • 1/3 cup soy sauce
  • 1/4 cup brown sugar
  • 1 garlic clove, finely chopped
  • 2 teaspoons finely chopped fresh ginger
  • 1/4 cup dry white wine (optional)
  • 2 cups beef broth (or 2 1/4 if not using wine)
  • COOKING:
  • In a saucepan, combine all ingredients and bring to a boil. Refrigerate.
  • Cooking recipe number 2 (alternative):
  • • White wine - 1 stack.
  • • Soy sauce - 0.5 stack.
  • • Ginger
  • • Garlic - 1 tooth.
  • • Granulated sugar - 1 tbsp. l.
  • • Starch - 1 tsp.
  • Bring the wine to a boil. Add soy sauce, grated ginger and garlic. Boil for 3 minutes, drain. Put on fire, add sugar and when it dissolves, add starch.
