Ingredients

wheat flour 330 g
milk 180 ml
fresh yeast 4 g
butter 25 g
salt 4 g
honey or molasses 1 tbsp

Cooking method

  • 1. Dough: dissolve the yeast in warm mmilk and, mixing with 200 g of flour, put it for fermentation for 2.5 hours (I put it in the oven with the light on).

  • 2. Dough: add honey or molasses to the dough and add 130 g of flour in several steps. Knead at a low speed for 3-5 minutes, until smooth. Then add salt and melted butter and continue kneading at medium speed for another 5 minutes.
  • The dough is collected in a bun in a couple of minutes after the introduction of oil. At the end of kneading, the dough becomes elastic. Leave to rise for another 1 hour.

  • 3. Forming: Divide the dough into two equal parts. Form 2 bundles from each part - about 15 and 20-22 cm each. Let them rest for 5 minutes. Then, on a shorter tourniquet, put a cross on a longer cross and make 2 twists from left to right. Flip 180 degrees and wrap the other end of the bundle in the same way. Form the second coil in the same way.

  • 4. Prove for 45 minutes and bake at 200 degrees for the first 10 minutes. Then lower the temperature and bring to readiness (another 10-15 minutes). Before baking, grease the coils with a mixture of milk and yolk.

The whites are just airy. They cut well, do not crumble. Very tasty with butter, jam, hard and processed cheeses.

And if you want some butter, then pay attention to the mint-orange buns. They can be made simply with vanilla, and the dough is not difficult and fast enough. The rolls are very airy, they do not stale for a long time.
