Swordfish with olive sauce and aromatic rice with green peas

Ingredients

for fish:
swordfish 600 gr.
olive oil 50 ml
butter 1 tbsp. l.
garlic (chop coarsely). 3 teeth
for the sauce:
tomatoes (peeled and cut into slices) 300 gr.
olives 10-12 pcs.
dry red wine 90 ml
a little sugar
black pepper (peas) 10 pieces.
bay leaf. salt. pepper 1 tbsp. l. parsley
rice with green peas:
your favorite rice (I have Jasmine) 250 g
olive oil 2 tbsp. l.
vegetable broth (celery, onions, carrots, cn etsii) 300 gr.
green pea 500 gr.
dill 4-5 st. l.
garlic 3 teeth
olive oil 3 tbsp. l.
butter 1 tbsp. l.
Salt and freshly ground pepper to taste

Cooking method

  • first we cook the rice:
  • reheat ol. butter (2 tablespoons) in a saucepan and quickly fry the rice in it. pour the broth over and cook over low heat until the broth is almost completely evaporated. the rice will be half-baked.
  • Heat olive oil and butter in a saucepan, place garlic crushed with a knife in it. simmer for 2 minutes.
  • add dill. simmer for 2 minutes. then add the peas and simmer for 5-7 minutes. remove from heat.
  • line in a heat-resistant form alternating with layers of peas and rice. place the garlic on top and cover with foil. bake preheated to 190aboutFrom the oven 30-35 min., After 15 min. add a little broth if necessary
  • a fish:
  • salt the fish. heat the oil in a saucepan and fry the garlic in it for 1-2 minutes .. then remove the garlic.
  • fry the fish in the remaining fragrant oil for 2 minutes. from each side. choose fish on a plate.
  • sauce:
  • in oil. where the fish was fried. add tomatoes. olives and wine. peppercorns. sugar and bay leaves. 100 ml. water. cover and simmer for 10-15 minutes.
  • remove the cover. put the fish in the sauce and simmer without covering for another 10 minutes. Remove from heat and sprinkle with parsley.

I don’t know about you. and I just love Greek cuisine. for its originality. unrepeatable th taste and national flavor !!!
every time you cook this or that dish. I am discovering a new incomparable taste. And does not matter. that it is meat. a fish. vegetables or sweets. I like absolutely EVERYTHING! so in this recipe - a spicy and moderately spicy sauce with olives. just born for delicious and wonderful fish. which. more like meat! and aromatic rice with green peas. it may well be an independent dish. but paired with fish and sauce - it sounds. like a hymn to perfect food! highly recommend. try it. Yes ... and do not forget to treat yourself and your loved ones to a glass of cold dry white wine !!!!
