Kefir cakes

Ingredients

Wheat flour 350g.
Fresh yeast 10g.
Kefir 150g.
Warm water 75g.
Butter 25g.
Vegetable oil 25g.
Salt 1h l.
Sugar 2h l.
For lubrication:
Vegetable oil*
For sprinkling:
Sesame

Cooking method

  • Grind yeast with sugar.
  • Add all ingredients. Knead the dough. In a combine with knives - 10 minutes. The dough is soft, slightly sticky to the hands. Leave to rise for 1 hour. I left it right in the bowl of the combine.
  • After an hour, knead the dough, form a ball and place in a container slightly oiled with vegetable oil. Put in a warm place for another 1 hour.
  • Then put the dough on the table (no additional flour is required). Wrinkle, divide into 4 parts. Form tortillas. Place them on a baking sheet lined with paper. Cover with a towel and leave to rise for 30 minutes.
  • Brush with vegetable oil and sprinkle with sesame seeds before baking.
  • * I want to say right away that sesame seeds do not stick in oil, and after baking, they all crumbled. Therefore, I still recommend greasing the tortillas with a beaten egg.
  • Bake in an oven preheated to 210C until light brown. I have 20 minutes.
  • Delicious cakes with a breathtaking smell. Recommend.

Omela, good evening! Tortillas are just a feast for the eyes! I add another recipe to my piggy bank.
If possible, a few words about sesame seeds. Now I don’t remember where I read it. But I tried it and since then I have been doing this: I pour sesame seeds in a heap on a cutting mat (in the corner) and dip the buns during molding - that is, I rounded them and rolled them in a circular motion. And I put it on the proofer. Before baking, grease on top of sesame seeds. Almost nothing falls off the finished products.

And if you grease before proofing, it will not affect the quality of proofing ??? Omela, just roll before proofing. And I grease it already before planting in the oven, after proofing. I carefully walk with a brush and that's it.
Of course, I am not such a pro as you, but, in my opinion, dry sesame should not influence the quality of the proofing.

But I still somehow tried to knead in a combine, with knives, kneaded for several minutes, contrary to the instructions - nothing worked for me: girl_red: The dough does not stick off the walls, gluten does not develop. I had to knead in the old reliable HP.
I have an ordinary KENWOOD home processor, it is already 10 years old, I have a knife and an ordinary dough mixer. The dough for dumplings, khachapuri, etc. turns out beautifully and in 1 minute.

Ira, harvester - I compare in the broad sense of the word. It is more correct to say a kitchen processor. They have a special knife shape that allows you to knead yeast dough. These are Kitchen Aid, Bosh, and KENWOOD. I don’t know if your model has such an option. I know that in the last 10 and 20 there are. I have Termomix. In the photo there is a knife on the right:

A few minutes is very short for gluten development. Here HERE I gave an article where the author describes methods of mechanical kneading of the dough.

I will try different options with what I have. Maybe she would have gone broke for something more modern, but sorry for the old one, it works great. Or maybe you really can twist it for 10 minutes without a break ... then you can buy a new one with a clear conscience

So at the lowest speed it spins like a propeller, wp-jerk and you're done. Faster than a bread machine, in my opinion.
I generally have a problem with mixing. I have a planetary mixer with a hook. New relatively, Morphy richards. Rye dough and all other non-yeast dough (khachapuri, etc.) are kneaded perfectly. Wheat yeast - at least kill yourself: either kneads some kind of slurry, or (if more steep) crawls onto the hook like a slug, and you have to push it out of there all the time. I have already stopped trying, I just mix it in HP and it turns out great. This means it’s not about flour or water or recipes. And in what - I cannot understand
I understand that it is difficult to understand what is the matter by correspondence. We'll have to figure it out further.

I made it in HP, did not bother with combine-mixers. It was rolled in sesame seeds until proofing, and it really didn’t sprinkle, at least there was a lot left, even a bit too much.
And one more thing: I took less oil: 20 and 20. Next time I will try to reduce the amount of oil a little more. And of course I will do them many times.

I added a little water, slightly reduced fat and sugar, the dough is soft, amazing, absolutely non-sticky, it's just a pleasure to work with it. Reduced the temperature in the oven to 190 - 200 (the last 7 minutes later began to burn from the bottom, but this is probably the cost of my oven)
It turned out - CLASS!
I've been baking for quite some time, each time trying different recipes for breads and buns for breakfast. These cakes are the best. Both very simple and relatively fast.
Now I will have the main ones.
