Whole wheat-rye bread with oatmeal and peanuts

Ingredients

for 30 cm mold
Whole wheat flour 300 g
Oat flour 100 g
Whole grain rye flour 100 g
Salt 1/2 tsp
Sugar 1 tsp
Butter 100 g
Fresh yeast 50 g
Buttermilk 300 g
Flax-seed 1 tbsp. l.
Chopped peanuts 50 g
Sesame 1 tsp
Olive oil 1 tbsp. l.
Dried thyme 1 tsp

Cooking method

  • 1. Mix three types of flour with crushed yeast, granulated sugar and salt. Heat the buttermilk and melt the butter in it. Pour the mixture into the flour and knead with a mixer for 5 minutes.
  • 2. Cover the dough and leave in a warm place for an hour. It should double in volume.
  • 3. Heat olive oil and sauté peanuts, sesame seeds and flaxseed family. Then cool it down.
  • 4. Preheat the oven to 200C. Flour the countertop, knead the dough, add peanuts, flaxseed, sesame and thyme. Grease a mold, put the dough in it and leave it for 15-20 minutes to rise.
  • 5. Pour 2 tablespoons of water over the dough, place on the bottom rack of the oven and bake for 50 minutes.
  • Council. If you put a heat-resistant container with water in the oven during baking, then an appetizing crisp will appear on the bread.

A friend brought me a lot of cards with different recipes and one of them has a very interesting recipe for bread.
I want to try to bake such bread, but I just don't know where to get whole grain rye flour.

Whole wheat flour can be substituted for regular wheat flour, but the taste of the bread will be completely different, of course.
I read in some recipes that bran was added to wheat flour (in the absence of whole grain). Try to ask HERE.
