Today I rolled up 6 liter jars, I also want to eat aunt's cucumbers. Last year I was just looking at the recipe, but this year curiosity got the better of me and I decided to try these cucumbers. In winter I will come and report, I have not deviated a step from the recipe.
yara
Oksana, for the second year I have been closing cucumbers according to this recipe (thank you !!!!), and only recently I saw that the cucumbers were not from Margarita, but from Margita.

Yes, my aunt's name is Margita. Just recently I came to visit Ukraine, we told her that according to her recipe, the floor of the city was already closed, and now she went into the world in general.

Girls, I want to make cucumbers tomorrow. And what kind of salt do you take, fine or coarse?
Summer resident
Coarse salt, NOT iodized
Santa777
but not very salty, will it be a whole tablespoon per liter jar?
kirch

No normal. Measure 12 g for calming.
Summer resident
The cucumbers are awesome. Thank you very much to our Lozichka and her aunt

Everything is fine there, you yourself will be surprised when you try it. Do not try to change the recipe, nothing good will come of it.
Santa777
Girls, thanks. I went to cook. And when will you be able to try them?

I think it will be easy in a month.

I read all the pages, drooling over the keyboard ... I want to do it !!! One thing is not clear ... It is said this way: "When the lower layer of cucumbers darkens ..." How's that? Is it possible to lay cucumbers lying on the very bottom of the jar? and on this row and navigate? And if I put them upright in a liter jar ... then wait until all this "standing" cucumber darkens from top to bottom?

Usually small cucumbers are taken in a liter jar. And they fit while standing. Here are the cucumbers standing below and be guided. Look at Oksana's first page how the cucumbers are.
Lozja
Uralochka, Lyudmila writes correctly, the cucumbers are small, we put them on the bottom while standing. When the cucumbers begin to darken from bottom to top, we catch the moment when the tops of the first row of cucumbers have just darkened, and immediately take it out. If you have large cucumbers, it is better to cut them into 2-3 pieces across, and then stack them.
I hope you enjoy the result.

Well, thank you! And, please, open the "terrible secret", small cucumbers, in your opinion, how much is about a cm in length? And then everyone has their own concept of size ...
P.S. My father-in-law, for example, considers the cucumbers that I already call overgrown to be small ...

For me small ones are like a finger long, and a little more than a finger. Such as two fingers are already big.

Agree. I only ditch such. If more, I cut into salads

Should you also turn over the jars with these lids? I just don't know how to make blanks yet. So I ask

I used to turn over cans with non-machine lids, and then ... I stopped ... I decided for myself that if the lid bent, everything is fine. And while the lid is concave, I am calm ... And the lids, when inserted, emit a loud enough click ... My daughter tells me so ... Mom, again your cans clicked all night ...
metel_007
As far as I know why they turn the cans upside down, as my grandmother explained to me that this is in order to check how well the lids are screwed on (if the liquid does not leak, then everything is OK).
By the way, this year I managed to roll up the salad, turn it over and everything flows. It turned out that the semiautomatic machine had deteriorated, the wheel that presses the bezel on the lid was worn out. I bought a new car.

I heard a different version. That you need to relieve the pressure on the covers ... they say, the pressure on the bottom is less, there is less chance that they will explode ...

And about the quality of twisting, clicks are needed. If the jar is not properly closed, the lids will not bend. We are here with something like that Wiki at two o'clock in the morning the lids were examined ... after the extended version that these lids are disposable, and after one use they are all concave ... but we have Wiki they all turned out to be curved ...

Maybe I always flip anyway

I recently read here, a man wrote that you need to put jars with the lid up. Turn over immediately after seaming to see if it leaks. And then put it on the bottom. Explained this from the point of view of physics or something there.
metel_007
When I turned it over, I usually wrap it up and stand like that for a day until it cools completely. Then I turn it over and put it away.
Nyuta78))
I have to say thank you! Gorgeous cucumbers turned out, crispy)) took a sample of the fresh harvest.
uralochka
I noticed that the packaging with screw caps on the label says: "Do not turn over!" and the corresponding icon is drawn. Since then I have tried to turn only cans with lids rolled up, not screwed ones.
Natul4i4ek
And many thanks from me! I have already tried it, though very tasty!
GruSha
can you try it already? Pickled at the end of July
metel_007
And today I opened, something is not right, they are somehow insipid. Maybe not ready yet, or forgot to put something in.

Well, for sure, they didn't put something, you can't call these cucumbers fresh, whatever your taste preferences.

Oksanochka, and I thank you! Cucumbers are very tasty and easy to prepare! To my shame, I never got cucumbers - sometimes cloudy, sometimes soft, sometimes bland, sometimes exploding. And a couple of years ago I decided that everything, stop wasting time and food ... and then I saw this recipe, rave reviews, and decided to take a chance. And hurray! I did it! I closed only 5 liter jars, but they are all pretty, intact, and how delicious !!! At first I didn’t want to put a carnation, well, I don’t like it, but then I thought that if I risked it, then in full, and put 1 bud each. It turned out very tasty! Even my husband, who only recognizes pickles, appreciated it! In general, thank you and your aunt very much !!!
Lipchanka
I also want to say thank you very much. I made 5 liter jars for testing. Opened yesterday. Well, very tasty cucumbers. The taste is what I like: hard, spicy, sweet with a pleasant sourness. With potatoes, it's just lovely. One of the best recipes and not complicated at all.
Chamomile
Thank you. I opened a jar of cucumbers yesterday. It turned out very tasty. And even my not favorite carnation is in place. Very sweet and crunchy cucumbers. I opened those that I had overexposed. It turned out fine. Not soft. According to our recipe, they also turn out tasty and sweet, but we have less sweets and they are a little sharper than yours. So I really, really liked your cucumbers.
Lozja
Girls, everybody's health! I am glad that the cucumbers did not disappoint you.
uralochka
Oh, thanks!!!!! Opened the jar! First of all, I always try the pickle, I drank almost half a can at once! I stopped myself only by remembering that my husband should be left to try! Cucumbers are lovely too! now we need to prepare more for the next year!
P.S. I endure something ... And I gave the youngest a try, he walks and asks: "Yeah cucumber!" I've already skimmed three of them, I had to hide the jar out of sight, otherwise, I'm afraid, it won't be up to dinner. My heart feels that today I will have to open the second jar! THANK YOU!!!
Lozja
It's such a joy to read such reviews. Thank you for trusting the recipe! And to your health.

For whom it is pleasant, but for someone it is not easy, I read this laudatory ode yesterday and almost ran to open the jar, but I had planned to open it for my birthday, you have to impress the guests with delicious cucumbers. I closed only four banks and, moreover, I went to visit with one more, like with a present. So I'm holding on with my last bit of strength.

Well, hold on now, what to do. You will know how to close 4 banks in total.

Super-duper cucumbers: hard, crunchy, with a light clove aroma, salt, sugar, vinegar - everything is right. And how easy it is to roll them up! I put in permanent recipes.
Gaby
Oksana, I gave up, opened a jar of cucumbers the other day, what a charm it turned out, but I didn't even feel the cloves, although I did everything strictly according to the recipe. Thanks for the recipe, now I will only make pickled ones this way, only if the cucumbers are of the right size. At my bottom they are small (see 7-9), and at the top they are tiny, about 3 centimeters, I was afraid that the upper ones would be soft, but they turned out to be the same as the lower ones.

Little gherkins are the most delicious! And if the cucumbers are too large, they can be cut across into 3-4 parts, my aunt always closed it just like that, and I remember these cucumbers from her - with such barrels. It turns out to be no less tasty.
Gaby
Oksana, thanks for the addition about the size.

The cucumbers were opened, delicious. Thanks for the recipe! Did a little to test.
