Ingredients

For the test:
flour 350 - 400 g
baking powder 1.5 tsp.
softened butter 200 g
sour cream 20% 200 g
salt 1 tsp
yolk 1 PC.
Filling:
feta cheese 200 g
cheese (any hard) 200 g
cottage cheese 250 g
eggplant (medium size) 2 pcs.
potato (medium) 1 PC
eggs 2 pcs.
flour 3 tbsp. l.
chopped black pepper
finely chopped parsley
For greasing and dusting:
egg 1 PC.
rast. oil 1 tsp

Cooking method

  • Delicate dough, juicy filling ... but what is there? You have to try it !!!
  • The pie is large - the products are based on a 33 x 27 cm mold. I took a 26 cm mold, it turned out to be tall and plump!
  • For greasing and dusting:
  • Beat 1 egg with 1 tbsp. l. vegetable oil
  • 3 tbsp. l. sesame seeds
  • 1. Mix all dough products and knead to a homogeneous dough. Its consistency is quite soft, and try not to add flour (I literally added a tablespoon). Wrap with cling film and refrigerate for an hour.
  • 2. While the dough is in the refrigerator - prepare the filling. Eggplants (I have two eggplants weighed 460 grams) cut lengthwise into two halves and bake on the oven rack (200 degrees 20-30 minutes). Allow to cool, peel off, cut into small cubes. Grate cheese on a coarse grater. Crumble the cheese, knead the cottage cheese, finely chop the greens, boil the potatoes and knead. Prepare the filling by mixing all the ingredients.
  • Cheese, cottage cheese and feta cheese can be in different proportions, but the total weight should be 650 grams. Greens can also be taken in different ways. I took parsley, green onions, celery leaves, basil, dill ... It's good that summer !!!
  • 3. Heat the oven to 180 degrees. Divide the dough into two parts: one third and two thirds. Roll out two thirds of the dough into a rectangle and transfer to a greased pan. Press to the bottom and sides. Here is the most interesting thing ... This dough cannot be rolled out with a rolling pin just like that, so they came up with a trick: Place a ball of dough between two sheets of baking paper and roll it over the sheet. I did that with the top. She rolled it out, and then transferred it to the pie, helping to quietly separate the dough from the sheet with a scraper. And with the lower part, I did it easier. She kneaded it with her hands in a detachable form, forming high sides to the edge of the form.
  • 4. Put the filling on the dough and smooth it out. Roll the remaining third of the dough into a rectangle, cover the filling and pinch the edges.
  • 5. Grease the pie with an egg, prick with a fork in several places, sprinkle with sesame seeds and place in the oven. Bake for 45 - 50 minutes, or until the top is well browned. Remove from oven, let cool until warm, and eat !!!

  • This pie can be eaten all day ... In the morning - with sweet coffee, for lunch or dinner with a portion of green salad or a glass of wine. Arrange a holiday for your beloved and yourself !!! Do you have a favorite? Then what are you sitting on? No? Bake - it will be !!!

  • PS By the same principle, you can make an open casserole with mushrooms and cheese. The dough can be kneaded with or without an egg. If you use a ceramic refractory mold, then first bake a basket of dough - not completely, but at least 7-10 minutes. The fact is that such forms conduct heat worse, and the filling is wet, but the bottom needs to be baked. While the dough base is baking, prepare the filling: mix grated cheese of one or different types (about 100 g), mushrooms cut into slices from a jar (if any, I add fresh mushrooms), about half a glass of cream, 2 eggs, finely chopped herbs, salt and pepper. Pour the mixture into the baked base mold and place in the oven for about an hour.

The pie was in the oven for a long time. Probably more than an hour. The top is well browned. I pulled it out of the mold, and it turned out that the bottom was still very light (probably because of the cupcake mold; maybe if the mold were flatter, it baked faster next time I would try another). I was afraid that the pie was not ready yet, I covered it with foil on top and in the oven. He stood for another 10 minutes and then everything was OK. Since I baked in the evening, I felt very sorry for him immediately being so handsome ...
