Ingredients

Zucchini medium 1 kg
Eggplant 1 kg
Pepper 4-5 pcs.
Garlic 1 head
Oregano 1 tsp
Dill bundle
Salt taste
Olive oil 2-3 st. l.
Balsamic vinegar 2 tbsp. l.
Cheese type 2 tbsp. l.

Cooking method

  • Once I had a chance to try such a vegetable side dish in one of the opened cafes with an Italian name and a claim to real Italian cuisine. It was in winter and the vegetables were most likely frozen, so I decided to remember the taste of this dish and cook something similar in the summer season.
  • Wash, dry the vegetables, cut the zucchini and eggplants into half rings (if large) 1-1.5 cm thick, the pepper can be cut into halves and the core removed, and if it is small, then it can be whole. Salt (but without fanaticism), sprinkle with balsamic vinegar (I managed to get this component from Italian production), sprinkle with herbs (in principle, who likes what), chopped garlic (chopped, not squeezed out) and leave for "acquaintance". I think that the longer, the better, but I did not have time and after 1 hour I chickened out the excess liquid and sent the vegetables to a baking sheet greased with olive oil.
  • The vegetables were baked at a temperature of 180 * until tender (I think it would be no less delicious to bake them in the grill or fry them in a grill pan.
  • A few minutes before cooking, sprinkle with grated Parmesan.
  • Great vegetable side dish! Perhaps for some it will seem rustic, but on hot summer days it is delicious and not difficult at all.

Note

I think the replacement of vegetables is quite acceptable. You can cook cauliflower or Brussels sprouts, asparagus beans, etc. in this way.
