Lean dough with mustard oil in a bread maker

Ingredients

water 230 ml
wheat flour 400 - 450 gr (depends on flour)
salt 1 tsp
sugar from 1 to 2.5 tbsp. l. (depending on the filling - for a sweet filling and more sugar in the dough).
mustard oil 4 tbsp. l
dry yeast 1.5 tsp.

Cooking method

  • Change the amount of sugar depending on the filling you choose. The sweeter the filling, the more sugar you add to the dough. Variations in the amount of sugar from 1 to 2.5 tbsp. l.
  • You may need to add flour. When I cook from flour for general use, 400 grams is enough for me personally, but if the flour of the highest grade is Stary Oskolskaya, then I take more of it, because the dough turns out to be more tender and it spreads out for me. Watch the consistency of the bun while kneading the dough with a bread maker.
  • Place the food as directed in the instructions for your bread maker. Switch on the "Dough" program.

  • If the duration of the program is 1 hour 10 minutes, then at the end of the program, do not remove the dough from the CP, let it stand for about 1 hour more (until the volume of the dough increases by 2-2.5 times).

  • I butcher on a table greased with vegetable oil, my hands are also greased with it. I do not cut the pieces, but pinch off, I do not roll out the cakes, but crush them with my hand. So, IMHO, faster. It is not difficult to prepare 14-16 pieces of pies for your family for lunch or dinner with the help of HP.

  • Any filling. Consider matching the sweetness of the filling and dough (see above).
  • If you are cooking with jam, in order to avoid opening the pies and leakage of the filling, first hold the jam in a colander, let the excess syrup drain and

Everyone who has tried it does not notice that the dough is lean.
If you try - answer me!

Olga from Voronezh, tell me, is mustard oil in principle for this test, or can you replace it with another vegetable oil? I really liked the structure of the dough on the crack of the pie, I want to try it, but mustard oil is not popular in our family.
Olga from Voronezh
You can use any vegetable oil, but for me there is a difference.
Yutan
Thanks for the recipe!

Thank you, Olga, I'll have to try.

Joy, it seems to me that mustard oil can be replaced with vegetable odorous (but not sunflower) - for example, walnut oil or sesame oil should work. Flaxseed is bitter, so it won't work
I, too, will not use up mustard oil - we do not like it
But for lean dough, it seems to me that it is some specific oil that will give a certain "sweetness"
Maybe try grape seed oil?

Mustard oil adds “sweetness” to the dough. Shop mustard loaves always taste like a bun. On this forum there are a couple of mustard bread recipes, by the way very successful, I often bake bread using them.

Quite right! The dough with mustard oil is much better than with other oils. Even the touch is different. By the way, the dough does not give off mustard. Baking with its addition does not stale for a long time.

The recipe for the dough is a dough in mustard oil, but replaced more than half of the water with rice water.

I made a pie from this dough today. With apples ...
I took pressed yeast 20 gr.
rolled, stuffed, pinched, proofed and baked on the same silicone mat. There is no round rug, you can use a rectangular one. The main thing is not to forget that the silicone is placed on a baking sheet or wire rack previously removed from the oven, that is, on an unheated one. Baking in a preheated oven. This is to prevent the silicone from being damaged.

"Kosovik" used to be, according to old customs, baked for the meeting of matchmakers and groom (matchmaking). : wink: The bride was cooking, and everyone interfered with her in every possible way! Yes, he is preparing, as you can see, very simply good2:
Why is the Kosovica crescent shape? That groom is a clear month, a symbol of a nascent young family.

Are there any settings in electric stoves that require the intervention of masters? I mean there to twist something, unscrew
Olga from Voronezh
Why not? When you set the temperature, does it match the reading of the thermometer?

And I didn't even think about it ... what thermometer can you measure?
Olga from Voronezh
Call the master best. Just say that you need to debug the oven. There was a temka about thermometers. But the mister came to me to tune with his device, more accurate. He will debug. Prepare a passport, instruction, service contract (if you entered into service of devices with any organization. Let it debug according to the instructions.
Olsu
Wow, I'll try! Are your baked goods dry too?
Olga from Voronezh
My lowest was 210 instead of 150 declared in my passport. I found a Temka about thermometers. There are about thermometers for determining the temperature inside the prepared dish, bread, meat ... (control of product readiness). And about thermometers, temperature probes for determining the temperature inside the oven (determining the temperature at which you cook).

And if you just bake it with bread buns? do you think it will be good?
Olga from Voronezh
It will be good.
Robin bobin
Yes, it worked well. Sprinkled them with sesame seeds. 15 small buns turned out. Warm ones are tastier than cooled ones, but only 3 things were able to cool down)))).

Olga, thanks again for the recipe. I constantly bake from this dough, now post)).There were already pies with cabbage, pies with peas - delicious. But now the idea arose to leave it in the refrigerator overnight. at least part of it. (I'm already making a double portion) It's too late to bake. Nothing, can I put it in the refrigerator ?? Is it going to be cold proof or what? Will the dough not suffer?
Olga from Voronezh
This is what I have not tried, that I have not tried. Write what you can do.

Olga, thank you very much for the recipe! With the dough I'm still on "you", but I get it every time, it's very tasty, I did it with egg-rice and with an apple, but especially my husband and son like cabbage pies.
Thank you!
Olga from Voronezh
Good as. Enjoy your meal! Thanks for your feedback!
