I want a good protein / yolk separator (I don’t know what it’s called in science). I took it somehow from a stainless steel with a handle, but I don't like it at all - the holes for the protein are large, and the cup for the yolk is small and shallow, plus the iron edges of the yolk are cut sometimes - the yolk constantly flows away, like a shaman - from shell to shell, and then easier, damn it.

What are the comfortable ones? Who tried what? And then my ice cream season has gone, and I need to be able to quickly organize the process.

I used separators for many years, but then I somehow got lost, or something else happened. And I began to divide in shells. It turns out neatly and much faster than breaking the shell, pouring it into the separator, also helping the squirrel to separate (it sometimes gets stuck on the sides), then take this separator in your hand to put the yolk in a container ..
And so - she broke the shell, broke it (this operation cannot be bypassed, even with a separator), the half in which the yolk was slightly tilted, the protein itself slipped from the yolk (sometimes you have to help your finger - press the rope to the edge of the shell), dumped the yolk into capacity. That is, everything is the same, but there is no intermediate stop in the separator.

Well, this is a matter of habit and technique, yes. But just to separate it from the shells normally - you need two hands, and so that no one hangs on you at that moment ... And it often happens to me that the senior assistant holds a bowl, and the youngest from the sling also strives to at least somehow participate in the process ... I use a plastic one, but there are definitely no sharp edges in it, so the yolk is not cut when I took a set of measuring spoons and cups from Lily and there was this divider. I love it very much, I only use it .... because I do not wash the eggs before use, but divide the eggs in the shell, then this is the direct contact of the protein with the outside of the egg, I'm afraid.

Always break eggs into it one at a time, even when you do not need to separate (if you suddenly get a bad one, you will not spoil the whole bowl of dough or minced meat). And the yolk that suddenly burst will not spoil all the previously broken proteins.

It seems to me convenient: everything is on the table, stable and hands are free.

It is impossible to achieve more yolk in any other way.
just use a bottle not with a narrow neck (cola beer), but toast (green tea usually).
The thin one spoils the yolk, but robs it without a trace!
