Ingredients

butter 100 g
sugar 100 g
eggs (large) 2 pcs
natural honey 1 glass
soda 1 tsp
flour 2 glasses
1 glass = 200 ml
cream:
sour cream 27% fat (minimum 23%) 500 ml
cream 35% 300 ml
powdered sugar 5 tbsp. l.
pitted prunes 300 g
walnuts (dry and chop) 200 g

Cooking method

  • a rim from a detachable mold 26 cm. 5-6 sheets of baking paper.

  • mix honey. sugar. soda. eggs and butter and put on a steam bath. / stir constantly. follow. so that the eggs are not boiled / until the sugar and oil are completely dissolved and a homogeneous mass is formed. add flour. stir well with a spoon.
  • let cool. cover with cling film and refrigerate for 12 hours.
  • taking it out of the refrigerator. let stand at room temperature for 3-4 hours.
  • I kneaded the dough at 21.00. took it out of the refrigerator at 9.00 am. and at 13.00 she began to bake cakes. it is necessary for that. so that the dough is infused and acquires its unique honey taste.
  • the dough is rather liquid. what is cool
  • on a baking sheet. covered with baking paper. place the bezel from the split mold. put in it 2 full tbsp. l. dough and spread it on the paper. you can lightly grease it with sl. oil. I have good quality paper and I did not smear.
  • bake the cake in a preheated oven at 1800From 7-10 minutes (depending on your oven) until golden brown.
  • cut the finished cake with a knife in a circle. remove with paper and put it to cool.
  • repeat the same procedure with the rest of the cakes.
  • in the original, 5 cakes are obtained. I got 6 pieces (I was afraid that it would not be enough and diligently smeared it with a brush. By the way, it is very convenient)
  • bake one cake much stronger. than the rest to a dark brown color and make crumbs out of it in a blender

  • cream:
  • beat sour cream with sugar. Whip cream separately. put everything together.
  • cut the prunes. chop the nuts.
  • assembly:
  • I took the first cake together with the paper and turned it upside down on the dish. and then gently peel off the paper / spread with cream and sprinkle. prunes.
  • 2nd cream. nuts. 3rd cream. prunes. 4-cream nuts. 5-cream. crumb mixed with nuts. sides of a crumb cake with nuts. Done!
  • the cake must be allowed to soak.

The first cake was baked with a ring from the mold, and the rest without it (the dough did not spread). So I used two baking sheets: I bake one cake and smear the other. It turned out 9 not very thin cakes. If done thin, then I think 12-13 pieces would work.

When I made the cream, it seemed not enough for 9 cakes. Then I added another 50 g of sugar and 300 g of sour cream. When I looked at the ingredients for the cake, I realized that it would turn out to be a giant cake, like a wedding. I had to do two - one huge, and the second normal. I have already put them in the refrigerator, and tomorrow we will try. Then I will report on the taste.

The dough did not turn out golden brown - my honey is light, acacia-floral; eggs are ordinary, with a light yolk. The dough itself is not liquid, I smeared it on paper with a silicone spatula. It turned out 5 cakes, it was possible and 6 - the first cake could be thinner.

Good morning I baked it. excellent for molding. But the cakes themselves probably did not work out for me - they are not as airy as in the photo. the color is darker. I kept it on the steam bath for 7-9 minutes, thanks to Button for the tip. And it turned out very sweet. Honey is really strong.
