Lviv cheesecake

Ingredients

Fat cottage cheese 500 gr. (the lower the fat content, the less juicy it will be)
Eggs 4 things.
Sugar 200 gr.
Butter 100 g
Semolina 1 tbsp. l.
Zest of one lemon, handful of raisins
For glaze
Butter 1 tbsp. l.
Sugar 2 tbsp. l.
Sour cream 2-3 st. l.
Cocoa powder 2 tbsp. l.

Cooking method

  • Preparation:
  • Pass the cottage cheese through a meat grinder or rub through a sieve. Attention!The curd should not be wet, otherwise the curd will be too dense. If the cottage cheese is wet, it must be hung in gauze for a couple of hours to drain, or put in gauze in a colander and pressed on top with a load (for example, a pack of buckwheat or something else).
  • Beat the yolks with sugar until smooth. I took brown sugar, but it does not dissolve well, so I did not beat until it was completely dissolved, since this would have to be done for a very long time, but for a cheesecake it does not play a decisive role.
  • Add semolina, butter, raisins to the curd, and pour in a mass of yolks and sugar.
  • Mix everything well with a mixer, add the lemon zest and mix well again.
  • Then beat the whites until they peaks.
  • Put the proteins in the curd mass and mix gently with a spoon.
  • Grease a baking dish and sprinkle with flour.
  • Put the mass in a mold and place in an oven preheated to 190 degrees for 50-60 minutes.
  • When the cheesecake is ready, take it out of the oven and let it cool completely, then remove it from the mold by simply turning it over (so that the surface of the cheesecake is even, it must be left on top below) and pour hot glaze over.
  • Glaze preparation:
  • Melt butter with sugar over low heat, stirring all the time.
  • Then add sour cream, mix well and pour in cocoa. Continue to cook on low heat, stirring well.
  • Without ceasing to stir, bring to a boil and turn off the heat.
  • Immediately, hot, pour the icing onto the curd.
  • And the most important thing: the cheesecake should stand in the refrigerator for 5-6 hours, or better all night. Never try to eat it right after cooking!

I removed the yolks as always. Instead of them, and butter - white chocolate on a substitute and cocoa butter. Instead of raisins, cranberries. Semolina of course with bran and sprouts. Instead of frosting, ganache made from 100% dark chocolate and zero cottage cheese. I added very good cognac to the dough and ganache.

I would put on 65 minutes of baking. At the end of baking, turn off the multicooker and leave it without opening the lid for 20 minutes. Then open the lid and, without taking out the saucepan, leave for another 1 hour (or even better, until it cools completely). Then turn the cheesecake onto a plate.
