Cheesecake with caramelized almonds

Ingredients

For the basics:
cottage cheese intended for baking (uniform consistency, 750 g
sour cream (200 g), fat content 9% 1 jar
sugar 1 glass
instant pudding vanilla 50 gr.
cornstarch (cornflower) 3 tbsp. spoons
zest 1 lemon
vanilla sugar 1 sachet (2 grams)
eggs 4 pieces, divided into whites and yolks
For the cream:
cream 38% 1 pack (200ml)
vanilla sugar 1 sachet (2 grams)
lemon juice a few drops to taste
For caramelized almonds:
sugar 3 tbsp. spoons
butter 3 tbsp. spoons
water 3 tbsp. spoons

Cooking method

  • The foundation:
  • Mix cottage cheese with sour cream, yolks, half sugar, half pudding, vanilla and cornstarch.
  • Add the lemon zest.
  • We heat the oven to a temperature of 160 degrees.
  • Separately, beat the whites with the remaining sugar until they become strong foam and add them to the curd mass.
  • We spread it in a split form, the bottom of which is laid with tracing paper (I have a diameter of 26 cm).
  • Lubricate the walls of the mold with oil.
  • We put the dish in the oven and bake until tender, from an hour to an hour and a half, depending on the oven.
  • Cool without removing from the oven.
  • Cream:
  • Whisk in the cream with the remaining pudding and vanilla sugar until thick.
  • Add a few drops of lemon juice.
  • Apply over the cooled cake.
  • Cooking caramelized almonds:
  • Put butter, water and sugar in a frying pan, heat until the sugar melts.
  • Add the almonds, lightly fry and add the cheesecake mixture.
  • Store in the refrigerator.

1.5-2 hours
