Wheat-rye bread with sourdough "Orlovsky"

Ingredients

Active rye starter culture 100% 200g.
Rye flour 100g.
Wheat flour 200g.
Milk 70g.
Leaf black tea 1 st. l.
Mineral water with gas 150g.
Coriander beans 2st. l.
Salt 1h l.
Sugar 1 st. l.
Unrefined sunflower oil 15g.
Vitamin C pinch

Cooking method

  • Brew tea in boiling milk. When it cools down, strain and take 25g. liquid !!!]
  • Roast the coriander in a hot dry frying pan, crush in a mortar.
  • Mix the leaven with warm (heated in a micron) mineral water, ascorbic acid, tea, coriander, sugar, flour, salt. I kneaded with a combine for 5 minutes. The dough should come off the sides of the bowl. Then add vegetable oil and knead for another 2 minutes. For HP, knead on any heated program for 15-20 minutes.
  • Place the dough on the table with wet hands. Form a ball. Grease the form with rast. oil. With moistened hands, transfer the dough into a mold, flatten.
  • Cover with a towel. Put in a warm place until doubled. It's cold in my kitchen, the dough took about 4.5 hours.
  • Sprinkle with water before baking.
  • Bake for the first 10 minutes at 250C, then reduce the temperature to 20C and bake until tender (about 40 minutes). If the lid is very browned, cover with foil.
  • Cool on a wire rack. Lubricate with oil if desired.
