Easter cottage cheese (with milk)

Ingredients

Milk 3 l
Eggs 10 pieces.
Sour cream 1 kg
Oil 300 g
Sugar 300 g

Cooking method

  • Beat the whites, sour cream, yolks separately. Combine and beat again. Bring the milk to a boil, reduce heat and pour in the mixture in a thin stream. While stirring, wait until the serum separates. Remove from heat, put in a colander lined with gauze. This should drain for about a couple of hours.
  • Beat butter with sugar, add the resulting mass. Add raisins, nuts, candied fruits to taste. I put in the vanilla. Stir and beat again. Put in a mold for Easter, (I cover the form with gauze, it's easier to get it out later), put it in the refrigerator for 1.5-2 hours under slight oppression. Take out, turn over, decorate.

It's even a shame that there is not a single review for this recipe. I have been doing this Easter for 25 years, no less. Very tasty, tender, well cut, not crumbly. There is practically no sourness.
From myself, I can add that I began to experiment with the recipe and instead of whole eggs add only whites (and the yolks - in the cake). Or two whole eggs, and the rest are proteins. Always great.
And it is not necessary to make the whole recipe, you can use 1 liter of milk, 300 gr. sour cream and 3-4 eggs. And it turns out a lot.

I was very interested in the recipe. And I just wanted to ask - is it possible to use whipped whites with sugar instead of eggs (from the glaze left - neither here nor there). Will the cottage cheese turn to stone?

I did not try to add glaze. I beat simple proteins a little (to destroy the protein structure), then stir them well with sour cream like this.
And you try on a small amount, and then write off the result? Many people still have glaze ...

I added glaze on whites instead of eggs. Nothing criminal happened. The cottage cheese has not turned to stone, oddly enough But since I did Easter for the first time, there is nothing to compare with. True, everyone wondered why my pastry was sour. I sinned on sour cream. Until I realized that I was adding citric acid to the glaze.

I want to try this Pasochka, in a similar way I cook cheese, like Adyghe cheese. Pour whipped sour cream with 3 eggs into hot milk. As a result, you get "your" cottage cheese and immediately boiled. :-)
