Lean mayonnaise

Ingredients

Large pear 1/4
Plain mustard 1/2 tea spoons
Granular mustard 1 tea the spoon
Salt 1/2 tea spoons
Lemon juice 1 table. the spoon
Vegetable oil (mixture of olive, sunflower and grape) 200-250 ml
Wheat germ 1.5 table. spoons

Cooking method

  • Peel a quarter of a pear from the skin and core, break into a pulp with an immersion blender, add salt, lemon juice and mustard. Beat lightly with a blender until smooth and while whisking, pour in the butter little by little. The mixture quickly becomes similar to regular mayonnaise. It seemed to me a little thin, and I added wheat germ flakes. The result is a very delicate sauce, aromatic and tasty.

I didn't have sprouted wheat, but flakes of embryos. I think we can do without them. Just put less pears so that it is not so liquid. Or thicken with sesame seeds or nut butter. There are a lot of options for creativity!

Kalmykova , came with a report. I didn't get the sauce as beautiful as yours. It is her own fault, in the end a lot of oil clung to it at once. And, therefore, it did not whip up to the state of mayonnaise. But it doesn't matter. The sauce is awesome !!!!! And I will definitely do it. An unexpected combination of pear + mustard is something!
