Baked tomato soup

Ingredients

tomatoes 1 kg
olive oil 4 tbsp. spoons
sun-dried tomatoes 3-4 pcs.
meat or vegetable broth 1 liter
onions (cut lengthwise into 6-8 pieces) 1 PC.
garlic 4 cloves (cut in half)
sugar 1 teaspoon
basil
thyme
salt pepper

Cooking method

  • Baked tomato soup

  • Cut the tomatoes into halves, put in a fireproof dish, add onions, garlic,
  • sprigs of thyme or rosemary, salt, sugar, pepper, basil. Salt, pepper, add sugar, olive oil. Mix. Place in a preheated oven for 25-30 minutes. Stir once during this time.
  • In a large saucepan, bring the broth to a boil, put all the vegetables in it and first select the thyme sprigs (you can separate the leaves from the sprigs). Add sun-dried tomatoes, let the soup boil and simmer over medium heat for 5 minutes.
  • Then put the vegetables in a blender, add a little broth and chop in mashed potatoes, gradually adding the rest of the broth.
  • Pour the puréed soup back into the pot and let it boil again. Salt and pepper the soup to taste.
