Easter buns

Ingredients

Dough:
Milk 350 ml.
Softened butter 80g.
Eggs 2 pcs.
Fresh yeast 20g. (7g dry)
Wheat flour 650g.
Sugar 4st. l.
Salt 1 \ 2h. l.
Ground cinnamon, nutmeg, ginger, ground cloves 1 \ 4h. l.
Mix of dried fruits (I have one raisin) 150g.
For decoration:
Wheat flour 75g.
Water 6st. l.
For lubrication:
Egg 1 PC.
For syrup:
Milk 4st. l.
Sugar 2st. l.

Cooking method

  • Grind yeast with 1 tbsp. l. sugar, pour into a bucket of HP. There are also milk, eggs, softened butter. Top with flour, remaining sugar, salt, spices. Dough mode (1.5h).

  • After some time, put the dough on the table, sprinkled with flour. Divide into 12 pieces. Roll each into a cake, put dried fruit on top, roll it up, form a bun, put on a baking sheet covered with paper.

  • With a knife (you can use the reverse side) to make shallow cross cuts.

  • Cover with a towel and leave to rise for 30 minutes.

  • Then brush with an egg.

  • To decorate, mix flour with water until a homogeneous consistency (I added water, it was thick). Transfer to a pastry bag (I just put it in a whole bag and cut off the tip). Make crosses on the buns in the grooves:

  • Bake in an oven preheated to 180C for 20-25 minutes.

  • Cool slightly and brush with milk syrup (boil milk with sugar and boil for 1 minute).

Note

By this principle, you can make buns from any dough.

The volume is large, so you can do half the norm.

You can add dye to the decoration, and the crosses will then be colored.

If you are not using syrup, keep in mind that the buns themselves are not very sweet. For lovers, sugar can be added.

I have a booklet "Easter pastries of Europe", so there similar buns are called cross buns and they write: "English Easter is hard to imagine without cross buns and a simnel cake."

The recipe is slightly different, but the idea is exactly the same.

The dough didn't even last me 10 minutes. according to the program, it flooded so out of the bucket that I shoved it twice, and the third time I already regretted it. As a result, the husband disassembled the HP in order to remove and wash the cover. If it hadn't been spinning around in the kitchen and looking at the dough, it would have escaped to the floor.
