Ingredients

Wheat flour 300 g
buckwheat flour 200 g
salt 2 h l
dry yeast 7 g
vegetable oil 3 tbsp. l
water 300 ml
sesame seeds or coarse sea salt for sprinkling
olive oil for lubrication

Cooking method

  • Do you know what the expression “jump into buckwheat” means in Ukrainian? The same as in Russian “go left”. I don’t know why our temperamental ancestors liked this particular plant ... Maybe the yellow flowers somehow influenced the romantic mood of the population in a special way. Or maybe because buckwheat was planted everywhere, and wherever you strive in a rush of love, you will still wake up in the middle of a yellow-green field. Well, so that the second half, having listened to the spring call of the ancestors, doesn’t decide to ride on the “left” fields, we will ... bake wheat-buckwheat cakes!
  • We mix dry ingredients: both types of flour, yeast, salt. Add oil and water. Knead well. Happy owners of bread makers, by tradition, trust the kneading stove according to the instructions. For about 30 minutes, the dough is ripened. We knead and divide our dough into 6-7 koloboks. Roll out the cake (about 1 cm thick) and let it rest for about 5 minutes. At this time, warm up the pan well. We spread our cake on dry frying pan. At this time, roll out the next cake and leave it alone. We keep the cake in a pan for about 4 minutes, turn it over and cover with a lid. We bake the other side for about 4 minutes too. Transfer the finished cake to a container with a lid, grease with olive oil, sprinkle with sesame seeds or coarse salt. We do the same with the rest of the cakes. The main thing is that they steamed well in a closed container, absorbing the breathtaking smell of olive oil.

I kneaded it by hand, added 2 tablespoons of white flour, only they fried with me much longer, first in a cast-iron pan, then on another, with a non-stick coating, it doesn't matter for a long time.
