Lecho in Tashkent

Ingredients

Eggplant 2
Zucchini (zucchini) 2
Bell pepper 2-3
Tomatoes in their own juice 1 can
Cilantro 1 bundle
Garlic 3-4 cloves
Salt, pepper, grows. frying oil

Cooking method

  • The recipe is taken from the spring issue of the magazine "Vkusno & Polezno" for this year.
  • In my opinion, it looks more like a stew, but since the recipe is borrowed, I decided to leave it with its own name.

  • 1. Cut the courgettes and eggplants into slices, salt and fry in oil until cooked in different pans or on the grill.
  • 2. Remove seeds from pepper, cut into strips and fry in oil until tender.
  • 3. Chop the tomatoes together with the juice in a blender until smooth and boil 1/4, stirring, add chopped cilantro and crushed garlic cloves, season with salt and pepper.
  • 4. Place hot fried vegetables in a salad bowl, cover with hot tomato sauce and serve.

Time for preparing:

1 hour

Note

It turned out VERY tasty, both hot and cold.

I roll something similar with fresh tomatoes for the winter. It is called "Eggplants in adjika" ... The first two cans, fly away not yet rolled up ..... So, we will call these 2 cans ..... "Lecho in Tashkent"!
