Mashed potato soup with broccoli and mushrooms

Ingredients

potatoes 7-8 pcs.
Champignon 150 gr.
bulb onions 1 PC.
broccoli 200 gr.
salt, pepper, herbs

Cooking method

  • Finely chop the onion, cut the mushrooms into slices. Fry the onion and mushrooms in a pan.
  • Wash and peel potatoes. If the potatoes are large, cut into several pieces. Place the potatoes in a pot of boiling salted water. Put broccoli inflorescences in the same pan. I take frozen, but you can also fresh. Boil until tender, drain the broth and save. Use a crush (or blender) to "turn" the broccoli potatoes into mashed potatoes. Gradually adding the broth, bring the mass to the consistency of liquid sour cream.
  • Add fried mushrooms and onions to the soup, salt and pepper to taste. Pour into bowls and sprinkle with herbs.

Note

This soup is good because you can add different vegetables to potatoes, for example, color. cabbage, pumpkin, spinach, carrots, etc. The taste will be different every time.
You can also add cream, which will make the soup tastier.
