Bean improvisation "Pods, peas".

Ingredients

Dough
Flour 2 tbsp.
Water 150 ml.
Chopped spinach 100 g
Salt 1 tsp
Sugar 1 tbsp. l.
Vegetable oil 1 tbsp. l.
Fresh yeast 10 g
Falafel
Chickpeas (beans) 250 g
Canned beans 1 b.
Zira 1 tsp
Coriander 1 tsp
Turmeric (optional) 1 tsp
Paprika (optional) 1 tsp
Chilli (optional)
Garlic 2-4 cloves
Greens (parsley, cilantro) large bundle
Deep fat oil 0.5 l.

Cooking method

  • Add satat and your favorite sauce for a complete meal. I think it's harder to describe than to cook. But from words to deeds. First of all, falafel, this dish of Arab origin, has long won the hearts (as well as the stomachs) of many Russians. An excellent, complete meat replacement for those who are fasting, as well as everyone who is not fasting. The original uses the legume chickpea (chickpea), which can usually be bought on the market, from sellers of dried fruits. If this is not possible, use regular beans.

  • First, soak the chickpeas overnight.

  • Bean improvisation "Pods, peas".

  • The next day, first we will do the dough for pea pods, everything is simple - we dilute the yeast in warm water and from the listed products we knead the dough, let it come up once, divide it into 10 equal parts, look on the Internet what a pea pod looks like and try to sculpt a similar one. Let's take into account that the dough will rise, so let's give the blanks a flat shape.

  • While the dough is melting, let's start filling - falafel. Wash the chickpeas and grind them with a blender or in a meat grinder. We also purée canned beans (originally canned or boiled chickpeas). Add the remaining ingredients to the mixed bean gruel: spices, salt, soda, chopped garlic, herbs. Let's mix.

  • So the dough has come, put our pods in the oven for 30 minutes at 220 gr. It is desirable that the top is not reddened. 10 minutes before the buns are ready, put on high heat, heat oil in a deep thick-walled dish, I prefer corn oil. From the resulting mass, roll balls with walnuts.

  • When the oil appears almost imperceptible to the eyes, but perceptible for the sense of smell, the deep fat is ready. Fry the falafel until golden brown.

  • Take it out with a slotted spoon and "dry it" on a paper towel so that excess oil drips off. Voila, our peas are ready! Meanwhile, the buns - the pods are ready and rest under a towel. If you had a free minute, then you prepared a salad of fresh herbs and vegetables, got your favorite sauce, my family prefers tahini and are ready to invite everyone to the table. While the household is washing their hands, you will cut the bun, put the salad in it, the falafel on it, pour the sauce and serve on a plate. This is the first option. Or you can serve everything in different bowls, let each one take care of the process of collecting their own pod. And I have everything.

  • Enjoy your meal and your loved ones!

The dish is designed for

falafel 40 pcs, roll 10 pcs.

Time for preparing:

1.5-2 hours.

Note

Zira (cumin) or cumin is the main spice of this dish. Their main task is to reduce the gas-forming effect of legumes and to help better digestion of fried foods.

A little about your preferences. Plus to the above, I like to pour the falafel with lemon juice and wash it down with sweet tea. Try it, you may like it, or you may have your own preferences.

Very nice pods. But I am new to oriental cuisine, so I had two questions. 1. Do I need to cook chickpeas or just soak them? 2. Canned beans with or without tomato?

Stunned how beautiful it should also be delicious

Oh, how beautiful ... And I have a question: I understood correctly, soak the chickpeas in the evening, and in the morning pass through a blender? RAW???

Oops girls Sorry for the long silence. I'm going on a trip - things are over my head, and even my two toddlers ... ... but better later.

Don't cook the chickpeas, just puree them raw.

Beans feel free to use any and white and red in any sauce. With tomato, you will get a little more sourness and dark color, with white beans, the falafel will be lighter, more yellow. Thank you!

And what is the point of combining raw and boiled chickpeas (beans?) Is it tastier than an exclusively boiled one?
milvok
This combination has a very positive effect on the consistency of the original product.

delicious)))
but a few questions arose:
1. Does the dough have to be "liquid"? (in HP, during kneading, part of the dough is smeared along the bottom)
2.the dough rose for a long time and was reluctant (in HP the full dough cycle + 40 min)
3.I took 40 minutes for proofing and still the rolls turned out to be 1.5 cm thick and did not increase during baking (only 3 falafels per pod fit)
4. Falafel balls scattered very much and did not hold their shape - is that how it should be?

What a notion, I take on arms for other options! Thank you!
